Happy Monday all! This morning, I had two objectives. Create a powered up protein packed breakfast that had staying power for our hike.
I managed to come up with this 1 Smartpoint Denver Scramble that was delish!I dices up bell pepper, onion, mushrooms and ham then sauteed them in nonstick spray.Once everything was softened and browned, I poured over our scrambled eggs.Just before they were cooked to perfection, I brightened the dish with some cherry tomatoes and cilantro. Using 4 eggs, this makes 2 servings.We looped the lagoon and hiked the tower for today’s hike. The cows joined us too.Then, we had Vasquez Tacos! I had 2 adorable mini street tacos with chicken.With one crispy chicken taco for 10 sp.After a little business talk, we went Olive Oil tasting at Sonoma Harvest and SePay Groves.I restocked my salad making supplies mostly from SePay. I learned so much about olive and it’s health benefits today.To celebrate my new flavors, I whipped up this super easy Zero Point Bean Salad – recipe coming up later this week.I made a batch of this pizza dough so I could make Cheesy, Chicken Pockets. I had high hopes of cheesy, pizza goodness but these tasted healthy. I used Trader Joe’s Lite Mozzarella and Turkey Pepperoni making these 4 SmartPoints each.
