Hi all! Yesterday I put together this delicious, red wine infused Lasagna Belmont so all I had to do was pop it in the oven and whip up a quick side salad for dinner tonight. This recipe is actually my healthy spin on The Husband’s mom’s recipe. This go round, I substitued lean ground turkey for the beef, used fat free cottage cheese and 10 oz Trader Joe’s Lite shredded mozzarella. I sliced it into 8 big pieces and let everyone dive it.
It’s super cheesy layered with noodles and you can taste the red wine throughout the sauce making it worth every point.This morning I knocked out a quick 31biteminute C25K jog walk and grabbed a fast breakfast and lunch. I snacked a bit more today based on actually being hungry. Dinner definitely hit the spot and I love that we have leftovers for a fast dinner tomorrow.
