Hi all! Today was such a fun day and I am proud of the choices I made even thoufh ut was aahigher point day. My stomach was not feeling so great this AM so I swapped my Chili Relleno Egg Casserole for something not spicy at all.
I kicked off my day with only a 1/2 cup of coffee and a Healthy Eggwich. One slice Nature’s Own Butter Bread topped with 1/2 Tbsp whipped butter and a fried egg with watermelon on the side.Mid morning I snacked on a Fage 0% Blueberry Greek yogurt (4 sp).My boss took us out to lunch at Mikunis. Everything you see was split 3 ways.
Zero Point Edamame with grilled Ahi.We ordered 3 rolls to share and I had a total of 7 pieces for 10 sp.
Left – Masa Three Roll – Smoked salmon, cream cheese, tuna, avocado, salmon, lemon and masago
Middle – Pimp My Roll – Spicy tuna, panko shrimp, avocado, salmon, sauce, torched, masago, onion and macadamia nuts
Right – The Incredible – Spicy tuna, panko shrimp, tuna, white tuna, avocado, sauce, torched, masago and onionThis one was new to me…I wanted to like it but it was just ok to me.?After lunch, we had a Build Your Own Sundae or Float where we all brought the ingredients to make our favorite treat.I intoduced my coworkers to Healthy Banana Ice Cream. It was so fun for me to make it for them showing how easy it is but I love that everyone wanted to try it.
I also can believe I didn’t take a picture of my food processor as I’ve never made so much banana ice cream lol.
My Sundae – banana plus banana ice cream, a little magic shell, whipped cream, sprinkles and mini m&ms. (2 sp for my toppers)I whipped up a quick dinner tonight so we could watch Shark Week.
