Happy Sunday all! Despite STILL being sick, today was a pretty fantastic day. It started off with our Weight Watchers meeting, then, we moved onto the Kitchen to whip up some delicious recipes for Brunch (hello crepes, breakfast pizza & coconut donut holes!) I LOVE cooking with The Husband especially now that he is getting into it and calls himself my “Sous Chef”.
I wasn’t sure what to expect for my weigh in since my eating was off from vacation and then being sick all week. Insert ~ I ate a lot of soup all week and didn’t work on balancing things as much as I usually do. I maintained which is a success considering, but, I am focused on making the scale move down next week to get closer to my Easter goal.
I was starving by the time we walked in the door, so I prepared a quick snack to tide me over until our Brunch started.
Morning Star Veggie Sausage & a BIG Asian Pear (2 points+)
The folks over at Eggland’s Best asked me if I’d like to help them celebrate National Heart Month by developing some delicious Brunch Recipes and inviting my friends and family to share in the fun.
How cute is the Egg Kit they sent us? I am completely IN LOVE with the little Egg Man!
As you all know, we eat A LOT of eggs ~ they are a fantastic source of protein. Whenever I start my day with an egg, I know I will be full for hours.
The cool thing about Eggland’s Best is they contain more than 2X the heart healthy Omega-3 fatty acids than ordinary eggs, 2X more Vitamin D and 10X more Vitamin E, a vitamin associated with reducing the risk of heart disease.
Plus, it’s ALWAYS fun when you see stamps on your eggs
Let me just start off by saying ~ all the recipes for this post will be posted all throughout this week. I know the suspense….really, it just takes time to type them all up and each one was so amazing I want to share all the steps!
For the first time EVER in my life, I made Crepes! They are so simple to make and I LOVE that you can serve them up sweet or savory.
Recipe #1 ~ Ham & Cheese Crepes!
Brown Sugar Baked Ham, Cream Cheese, Chives, Cherry Peppers and Arugula……crunchy, creamy, tangy ~ they taste like they shouldn’t be “good” for you!
We made 8 Ham & Cheese Crepes, cut them into thirds ~ each mini wrap is only 1 points+!
Recipe #2 ~ The Main Dish ~ Breakfast Pizza!!!
Not just any breakfast pizza….this breakfast pizza has it all!
Homemade Pesto, Sweet Tomato Slices, Cheddar & Chive Scrambled Eggs, Sausage & Bacon!
Each slice is 6 points+ and worth every single one.
To balance out our breakfast pizza, we whipped up a simple Arugula Salad topped with a homemade Lemon, Honey & Olive Oil Dressing (1 points+).
I realized the ONE thing I should’ve added to my pizza before we cooked it as soon as I dug in…..any guesses???
Red Pepper Flakes of course!
What Brunch is complete without “dessert”?! I have been wanting to use my Baby Cakes Cake Pop Maker ever since I made these 1 points+ Cinnamon Glazed Donuts.
I have also been dreaming of how I could make Coconut Donut Holes ever since Gail requested them! (Recipe #3)
I LOVE that you can taste the vanilla and coconut inside and out as these little donut holes melt in your melt.
1 points+ each so you can have more than one! (3 for 3 points+ – deal!)
Served up with coffee and this delicious 0 points+ fruit salad.
In the mix:
- 1/2 Watermelon
- 1 Honey Crisp & 1 Granny Smith Apple
- 2 Pears
- 2 Persimmons
- 2 Oranges
- 1 Mango
- HUGE Red & Green Grapes
- Raspberries
- 1 can pineapple chunks in 100% juice poured over everything to keep it from turning brown
Remember My Turkey Meatloaf Muffin addiction??? We both were not super hungry by the time dinner rolled away, but, the smell of these 3 points+ Turkey Meatloaf Muffins both had us digging in.
I actually made these up to have for lunches this week, but, ended up eating 2 straight from the pan with ketchup in top for dinner. (6 points+)

I also have a question? Why and when did you change your WW meeting/weigh-in back to Sunday from Friday? Only asking because I am thinking of doing the same…I weigh-in on Sunday, but am thinking of changing to Friday…we go out Fri and/or Sat and I’m thinking I need a bit of breathing room, trying to change things up a bit!

I LOVE Friday morning meetings and would totally go back to them if they had one early enough for me. I liked it because it gave me the chance to enjoy my dinner out on Friday/Saturday night and not have it affect my weigh in on Sunday. Here is the post I did explaining that.

OMG! This has got to be the best looking food I have seen in a while! These recipes all look so good! BK (before kids), I did much more cooking like this.. trying new things, etc.. WW weigh-in tonight! I believe I will be hitting my 5% today! That is if my at-home scale matches the WW scale.

Yummy! The breakfast pizza and those crepes look incredible! Last night I decided to try my hand at stuffed peppers. I am not exaclty Kitchen Savvy. They are chilling in the fridge right now and I will find out if I was successful tonight or not! Hopefully they do because I am planning on eating them for lunches 🙂 Love your blog and all of your recipe ideas! You have been a huge help for me as I have tackled this weight loss giant!

I made crepes (auto correct wanted to make that CREEPS!) last week for the first time! I used the February 2012 Eating Well magazine’s recipe. Do you know that magazine? It is so good!! They had both sweet and savory recipes but I went straight for the Banana-Caramel Crepes with Nutella. Super yum and worth the 8pp for a big old caramely, banana and nutella crepe! Love your recipes, Danica. You are awesome!!

I have always wanted to make crepes and now the time has come– as soon as you post the recipe!! Oh and I keep meaning to thank you for giving the nutrition info on your recipes. I especially like to know the sugar. Why do so many websites and magazines leave the sugar out of their nutrition info?
