Happy Sunday all! It was so fun hearing whether you would choose “Coffee or Wine” with your dessert. I actually think I agree with several of you and coffee or lattes are usually my dessert. When, I do have dessert, coffee is always my number one choice…..however, good dark chocolate is pretty tasty with red wine.
This morning we were up way too early for a Sunday morning so we could head off to weigh in then go to the Sacramento Antique Fair with The Husband’s mom. Before heading out the door, I made up a big bowl of Simply Filling Old Fashioned Oats.
1/2 cup Old Fashioned Oats with 1 cup of water in the microwave for 2 minutes. Then, I topped it with cinnamon…..
A bunch of berries and a mango…..
And a sprinkle of unsweetened coconut. There is so much flavor in these 3 toppings you will not even miss having sugar or butter in your oats. 100% SF – 4 points+
I was up .4 lbs at weigh in today, but, I totally consider that a success since it means I get to keep 3.6 lbs of my loss last week and I enjoyed everything I wanted at our 3 holiday celebrations this past week.
On our way up to Sacramento, we stopped for lattes ~ tall, nonfat, decaf latte with caramel drizzled on top. (SF) – 3 points+
After spending 3 hours freezing outside walking around the antique fair, we headed over to Rio City Café for lunch.
I warmed up with a cup of Lentil Ham Soup which I re-created today for dinner tomorrow. It really was that good…(SF) – 3 points+
I was totally content with my soup ignoring the bread brought to our table until The Husband and his mom started raving about how good it was ~ warm, soft, doughy…..Need I say more?!
It was worth every single WPA (SF + 3 WPA) – 3 points+
I totally picked the Spinach Salad because it came with bacon on top
Spinach, Pears, Roasted Pistachios, BACON, sans the stinky goat cheese and with the maple balsamic on the side…..This was one of the best spinach salads I’ve ever had, yet, so simple to make. (SF+ 4 WPA) – 4 points+
We spent the afternoon prepping for the week making up a pretty tasty Rosemary Chicken Salad, Perfectly Hard Boiled Eggs, Lentil & Ham Soup and we portioned out veggie tray veggies into baggies with ranch for quick snacking. I am also putting these Simply Filling Slow Cooker Oats on tonight before bed for breakfasts this week.
I picked up an Eat Smarter Edition of Fine Cooking today at the antique fair and picked out this Linguine with Roasted Asparagus & Almond Pesto Recipe to make for dinner tonight.
Preheat the oven to 425 and toss cherry tomatoes & asparagus with olive oil, salt & pepper.
Then, while the pasta cooks according to the packaged directions, roast the veggies for 20 minutes.
Add roasted almonds, basil, parmesan, a little of the roasted asparagus and olive oil (I used ony 1 Tbsp) to the food processor and pulse to make a pesto. I think if I made it again, I’d roast some garlic with the veggies and add a little garlic too….pesto isn’t the same without garlic.
Toss the pesto with the pasta (I only used 8 oz) and about a 1/2 cup of the pasta water.
Top with the roasted veggies, top with a few almonds and dive in. We both thought this recipe sounded and looked better than it was….it was tasty (is pasta ever really bad?), but, we both gave it about 3.5 stars. I think I’d rather have this almond pesto instead. (SF + 4) – 8 points+

Believe it or not, Raley’s and Sam’s Club. I was pretty excited to see it and probably paid too much, but, it was worth it to have something other than apples,pears and oranges.

If you want to try some Chanukah latkes without the mess, fuss, grease, go to Trader Joes in the freezer breakfast section and try their latkes. Quite tasty for 2 pts per latke and put their chunky applesauce on top. 0 points. We’re having this a few times this week, along with Game Hens tonight and grilled salmon tomorrow.

That pasta looks great! I’ll have to make that for my dad since he can’t have marinara sauce anymore!
And I agree that oats don’t have to have all that butter and sugar to taste great! I add the sweetest apples or bananas I can find with lots of cinnamon, nutmeg and cloves and it tastes great!

I made this yesterday and it was so easy to make. Just make sure you weigh out your spices etc. beforehand then it’s super easy and absolutely gorgeous
The best bit is that it’s only 7 propoints/pointsplus per portion as well. You can reduce it by replacing the double cream with something less fattening if you want.
