Hi all! How was your weekend? Today we made our way back to California and got everything in order for the week. I am really looking forward to getting back into the kitchen and back on track this week.
After our 4 am wakeup call and trek to the airport, I managed to find a place to order my breakfast sides.
Zero point scrambled eggs and a side of bacon (3 sp).Before heading to the grocery store, we stopped at Jersey Mike’s for lunch. I ordered the Mini Turkey & Provolone “Mike’s way” with jalapenos. Everything about this sandwich is good but the juice aka olive oil, red wine vinegar & oregano make it awesome and worth the points. (8 sp).
I shared a bag of Miss Vicki’s BBQ chips with The Husband (3 sp).I hit a wall late afternoon and decided to turn my afternoon snack into a Starbucks Grande Coffee Light Frappucino (6 sp).
Did you know a tall is 5 sp? That’s why I went with the grande for only 1 extra sp.I created a new Vegetarian Tortellini Pasta Salad that turned out so good. It comes together so fast as you just chop everything up while the pasta cooks.Whisk together a quick homemade lemon, olive, red wine Vinaigrette.? Toss and chill.There are a few secret ingredients in this Italian Pasta Salad. I totally based this salad off this zero point Trader Joe’s find.
I promise I’ll post the recipe soon. I love the crunch, chew, tang and how all the flavors go together so perfectly.
