Happy Monday all! How was your day? You know you had a good weekend when you wake up feeling like you just want to be outside and do that all over again. I decided to skip my morning workout but later regretted it as I actually missed it. I definitely think that’s a good sign I am building an AM workout ‘habit’.
I made up a quick 3 point Healthy Eggroll before heading out the door.Today I needed more caffeine so I had a grand nonfat cappuccino (3 sp).My coworker invited me out to Jack’s Urban Eats today and it was so delicious. We ate outside so I hot my sunshine fix.
I had the Salmon Bowl (6 sp).At work today, we had a new Lay’s Flavor sampling. I made sure to try a little if each with my watermelon / cheese stick snack (4 sp).The verdict – I love the flaming pickle but it’s so hot! The beer / cheddar is just wierd and the like sea salt tastes like fruity pebbles.I finally got back into the kitchen tonight and cooked this Cooking Light Creamy Lemon Orzo with Shrimp and Peas.
You can use any mix of protein and veggies but I loved the sweet pop of the peas….my pea hater actually ate them too but that might be because they were pretty mixed in 🙂
