It’s almost Friday!!! Yep, that’s what I’ve been thinking all day long. I’m back today with another Daily Snap Recap and sharing another one of my favorite things…Jennie-O Lean Turkey Breakfast sausages. Did you all know that you get 2 for 1 SmartPoint or 4 for 3 SmartPoints? That’s a pretty good deal in my book!
I quickly abandoned the lunch I brought today when my co-workers worker asked me if I wanted to go to Grace’s Table. When she asked if I wanted to share an appetizer, I quickly said Brussels Sprouts…You know you all would pick that too lol! I seriously love Brussels Sprouts when they are made right. (Why is their an “S” at the end of Brussels? I’ve always wondered that but never googled it.) Of course I also shared her choice of this delicious beef empanada that had raisins in it. The Husband also gets major points for making me a quick leftover dinner tonight before I headed out to my hair appointment.
Daily Snap Recap:
B: 1 egg + 1 egg white scramble (2 SP), 4 Jennie-O Turkey Breakfast Sausages (3 SP), cutie
S: Tall Nonfat Cappuccino w caramel on top (2 SP)
L: 1 c Brussels Sprouts (2 SP), 1/2 beef empanada (5 SP), tossed salad with chicken (5 SP)
Dessert: 2 small milk chocolate balls (2 sp)
D: 2 oz BBQ pork, 1/2 c Trader Joe’s Organic brown rice (3 SP), salad w 1 1/2 Tbsp Lite Ranch (2 SP)
S: Grande Nonfat Cappuccino with caramel on top (3 SP)…I always bring one to my hair dresser!

I know I’ve read it before and I think it’s the husband’s recipe but what cut of pork is that for the BBQ? P.S. and by the way, I am saving all your Daily Snaps for future reference!

The pork is a centerloin or porkloin cut into rib shapes. They sometimes have these at Raleys, Safeway and Sam’s Club.
