Daily Snap: Cowboy Chicken Nachos

Hi all! Thanks for the nice comments on our garden on yesterday’s post. I can’t wait until everything starts ripening then I’ll share more pics.  Today went down like a total Monday where my day filled up with meetings and I left feeling like I never did finish what I set out to do in the first place.

The good – one fantastic breakfast I can’t wait to repeat and getting in my walk in the AM to start my day off on the right foot literally lol.

The “OK” – having a not so tasty working lunch salad. I am proud that I stopped eating it when I realized it just wasn’t worth the points. Working late, not snacking and sticking to the plan for dinner.

The interesting – The Husband’s Cowboy Chicken Nachos. He got the idea from a sample at Trader Joe’s and declared this would be a dinner he makes.

Here is all you need to make your own Cowboy Nachos – BBQ chicken, “cowboy” caviar salsa, cheese and homemade chips. I love the sweet smoky Chipotle in the caviar.

Daily Snap Recap:

B: 2 eggs scrambled with 2 Jennie-O turkey sausages & homemade pico de gallo (5 sp), 1/2 cup cantaloupe

S: Grande iced Nonfat Latte with caramel on top (3 sp)

L: Mary’s Pizza Shack Cobb salad without stinky cheese & ranch on the side (9 sp for about half), 1 1/2 pesto bread sticks – the best part (7 sp)

S: I resisted an It’s It party at work by having just a bite and throwing my half from my coworker out (1 sp) – I figured I had the bread sticks at lunch so didn’t need this too.

D: 1 Svg Cowboy Nachos – 2 oz BBQ chicken (2 sp), 3 Tbsp Cowboy Caviar, 1/2 oz light Mexican cheese, pico de gallo, 24 homemade chips (8 sp)

    I just started WW on Saturday and I am wondering if I am counting smartpoint wrong. When I add up what you put as your day I come to a total of 43. Trying to figure out what I am doing wrong. I joined online so I did not get any guidance into the program. I am looking forward to going to a meeting on Saturday morning .

      Hi AnnMarie,

      I am not sure how you are looking up the points. I do put the points in brackets next to what I eat (2 sp) and I look up things based on the name brand when I can as it’s more accurate than looking up the general food.

      Hopefully that helps? If not let me know.
