Hi all! How was your weekend? Our weekend has been good. I started off Saturday with a 3 lb loss bringing March in the loss range for the month. It’s definitely motivation to keep it going this week. We road tripped on Saturday, did chores today including finishing our taxes and tomorrow is a day off for some relaxation – I cannot wait!
Breakfast this morning was slim pickin’s as I had not grocery shopped yet. It gave me a reason to try this Mixed Nut Butter I picked up at Trader Joe’s. I love the idea but it was just ok.
For lunch, The Husband requested Fresh Spring Rolls…Crazy, I know coming from him. I decided to do a spin on this Shrimp & Mango Spring Roll Recipe. I put the mango on the side and used avocado inside. It was super tasty and we both loved them.
My afternoon snack was as weird as it sounds but I couldn’t decide what I wanted. For some reason today, I haven’t wanted any vegetables so I skipped them at dinner and opted for sweet potato fries instead.
