Hi all! Today went down like a typical Monday packed with meetings including a sushi lunch. The good – I still fit in my walk turning one of my meetings into a walking meeting and being so busy I didn’t have time to think about snacks. That is until I got in the car to head home. I was so hungry but decided to start with my watermelon and then have something else if I needed it. But I didn’t – yay!
Have I ever told you all I love Hoisin and every time I cook with it The Husband walks around saying Hoisin any chance he can fit it in? It’s pretty funny. Dinner was the last of our Blue Apron meals from last week. It was Hoisin Chicken with Sesame Noodles & Cucumber Salad. My thoughts – I loved learning a new technique for cooking chicken and will totally use this in the winter when I can’t grill. The chicken tasted just like Chinese BBQ pork – I loved the glaze! I never knew how delicious tahini could make noodles – so creamy & nutty. It made a ton so I had about 1/4 of the recipe.
