Happy Monday all! Today I was up early to head to the Winery for a day of meetings and lunch at my favorite place in Healdsburg – Agave Mexican Grill. I kinda love that my co-workers love coffee as much as I do as we had “dessert” by getting coffee at Flying Goat. They grind dark chocolate into their espresso beans and it’s so good!
I had a bit of time on my 2 hour drive back to ponder dinner. I had planned on having Pepperoncini Pork Nachos as we made this slow cooker recipe over the weekend. But, I’ve really been craving my kid friendly, healthy version of Sloppy Joe Pockets. Yep, I totally sing the song “hot pockets” like the commercial in my head while making and eating them lol.
In the end as crazy as it sounds, I decided cooking at 8pm sounded best – it totally relaxes me. Now tomorrow’s dinner is all set too – I just have to pick what I want.
