Happy Wednesday all! Remember when I talked about the 80/20 rule earlier this month? Today was an example of that 20% and not for any type of birthday or life celebration. It really was because I “needed” it lol. More on that in a minute….first, let’s talk about this super delicious Italian Spiced Pork Pizza.
Did I mention it’s simple to make and I am definitely recreating it with my Homemade Simply Filling Italian Sausage.
Brown your “sausage” with a little garlic then add a can of drained cherry tomatoes. Smash in.
Meanwhile saute bell pepper and onion to get the water out, about 4-5 minutes.
After you roll out your store bought or homemade pizza dough, top with peppers, onions, sausage & 4 oz fresh mozzarella. I sprinkled the top with oregano. Bake at 475 for 17 minutes…slice into 10 pieces and dig in!
The Husband made this beautiful salad for us to go with the pizza. He cracks me up as his salad making is usually 1 for the bowl, 2 for him so he has a salad with his salad lol.
About today…It was super stressful. As in I couldn’t wait for my lunchtime walk to blow off some steam. That was the good part, right? Then, during my walk I decided not only did I need Thai food, I deserved it. I made a detour with my coworker and we ended up at Mini Mango.
The thing is…I could’ve made better choices and planned that on my walk. Then, my coworker gave me free reign to order anything I wanted. So I did just that. I didn’t do so great with that…1 of these, 3 of those.
I have to say, mentally I felt so much better and my taste buds we’re so dang happy. I did use a small plate to dish anything on it to keep myself in check.
I tracked it without guilt, balanced it out at dinner and I’m chalking it up to a 20% treat day because sometimes you really do just “need” some good Thai food.
