Hi all! How was your weekend? Our weekend was so nice. I really needed some downtime from our usual on the go schedule. It was nice to relax, get a few things checked off my list and get back in the kitchen. I think I’ve decided I like my sausage & egg breakfast burritos more than bacon – total shocker I know given my love of bacon. For those who don’t know, bacon was what I missed most when I was vegan/vegetarian lol.
Tonight I finally made my new version of Minestrone which turned out even better than I thought it would. I’ve always used ham but I like the added kick and richness of the spicy Italian sausage. My goal is to share this recipe along with my Southwestern Mac & Cheese recipe this week.
