Hi all! How was your weekend? Our weekend was super busy but fun. I did so much running around I checked off my 10K+ steps each day without officially working out. I am super excited I finally figured out my Halloween costume and I got to make up my gift bags for my coworkers.
I’m can’t wait to tell you all what’s in the bags but I have to give them away first! This mornings breakfast was slim pickin’s as I needed to go grocery shopping. After fueling up, we headed out for a day of shopping. We stopped for lunch at Vasquez Deli. I didn’t feel like my usual taco salad so I opted for a chicken taco and cheese enchilada. The Husband picked these Best Ever Steak Sandwiches for dinner which totally hit the spot.

While checking out the frozen hash browns today, I saw these Mini Tater Tots. You know I totally had to buy them and find a way to use them in a recipe. By the way, you get 19 for 5 sp.I created a new Tater Tot, Sausage & Egg Casserole – similar to this one.
