Eat What You Want

Happy Weekend All!  How many of you are ready for Day Light Savings Time?  I love springing forward because it means sunshine and warmer days are on their way (with fall and spring being my absolute two favorite seasons).  Yet, part of me doesn’t necessarily want to get up any earlier than I already do.

All week long I have been wanting to make Oatmeal Protein Pancakes for breakfast, but, I have not had enough time. 

Today I added a little shredded coconuts to kick up the flavor, but, I am not so sure that was a good thing as my Magic Bullet was smoking towards the end.  I know, I know…..I should’ve used the vitamix but it was such a small batch….I am wondering if this means I cannot use my bullet anymore?!

The Husband had his quarterly casino chip meet up today. It is so fun to watch how excited he gets – he literally spends an entire week getting his chips in order to trade, buy and sell with all his chip collecting friends.

We both stayed the Meatless Course by starting with Everything on the Salad Bar Salads.  I was so glad to see they had hard boiled eggs for protein.

Served up with Ranch on the side (SF + 3 WPA for the sunflower seeds & dressing) – 5 points+

Plus 2 slices of a small veggie pizza.  I am so proud my meat-atarian passed up the the ultimate meat pizzas! (SF + 8 WPA) – 8 points+

We both couldn’t decide on what to have for dinner tonight as we were not super hungry.  So, we went with the theme of Eat What You Want.

The Husband made a gigantic salad piled high with veggies, cheese and chickpeas for him.

While I whipped up a batch of French Fries with Ketchup for dipping as my dinner.  I totally ate that entire bunch of organic kale from our farm box.

Ok, Ok, Kale Chips, but, they taste like fries only healthier (SF+1 WPA) – 1 points+

Plus a big bowl of fruit to share and clean out the fridge to restock tomorrow.

I am thinking the Strawberry Surprise Flip Cho-Yo is going to be my dessert.  I can’t wait to dive in ~ (SF+2 WPA) – 4 points+

    I just discovered (aka I saw it on Pinterest, I’m pretty sure) that you could make hot cocoa from Keurig then steep a peppermint teabag in it for a few minutes. Mmmm, so good! I also add one of the Green Mtn coffees to it.
