Hi all! How was your Tuesday? My day was fantastic on so many levels. We were up early and out the door to head to one of our production facilities about 2 hours away. We kicked off our day with a tour of the lab, greenhouse and warehouse. This facility focuses on quality control and all the harvesting/packaging of the vegetable seeds for our customers around the world. It was seriously cool to see how everything comes together from farm to seed package.
We had a delicious pizza lunch where I did ok and then I made up for it as we spent the afternoon purging over 300+ boxes – exhausting.
I balanced out my day with a quick and tasty salad for dinner.

I totally want to try these two things with our team too.Before heading out the door, The Husband made me a quick breakfast – Sandwich Bros Turkey Sausage Egg White Flatbread 4 sp with a nectarine.After our morning cleanup and before the tour I snacked on too many sriracha almonds (8 sp).
At lunch, I filled my plate half with salad then took one slice each of the two veggie pizzas. So, so good and I’m estimating 16 sp for my plate.Our dinner tonight was my spin on this Weight Watchers Tex Mex salad.
I sprinkled my shrimp with Cajun seasoning and a little olive oil before grilling. I did the same with fresh corn.I mixed romaine with mixed greens, carrots and cabbage.Then, built our salads adding cucumber, sweet peppers, tomatoes, feta, corn and pistachios.Top with grilled shrimp and a homemade lime vinaigrette. I added a little honey to mine to sweeten it a bit.
