Happy Monday all! This morning I was up early to tackle my to-do list and get my workout on. I am not sure if I told you all or not, but, I am doing each C25K week twice before I move onto the next. I figure it allows me to build my stamina and doubles the weeks to workout.
Pre-Workout Snack – a banana
Workout #1: C25K 3.1
Workout #2: Jillian Michael’s Body Revolution week 3 and I finished! Holy moly this might be the hardest workout I’ve done yet.
I’ve been craving fried things lately so I decided breakfast needed to involve some fried hash browns.
3/4 cup Ore Ida Shreds “fried” in 2 tsp avocado oil and sprinkled with paprika, garlic salt & pepper. Served up with 2 scrambled eggs and blueberries for 4 WWfs Smartpoints.I broke for lunch 4 hours later having the rest of the leftover Sun Dried Tomato, Asparagus & Lemon Pasta. 10 sp.I had a big orange for dessert.5 hours later I crunched through a 100 calorie kettle corn bag (3 sp) as I crunched through taxes 😀 Yep, that was really bad accounting humor lol.This week, the Hello Fresh Menu looked too good to pass up.It’s going to be one delicious week.Dinner tonight was the Panko Crusted Pork Chops (think Tonkatsu), over rice with a sesame cucumber salad.
I love the mini fish containers and the glass ones are perfect for salad dressing.I pretty much followed the recipe but used alot less oil. I love how brushing the chops with sour cream made the panko adhere while keeping them from drying out.
The sweet, tangy sauce really adds a nice kick to the crispy pork chops. However, the crunchy sesame salad is something I’ll definitely be repeating.
