Happy Friday all!!! Do you ever wake up and know first thing before you get out of bed EXACTLY what you want to eat? Nope, it wasn’t a DIRTY LATTE LOL. This morning I was CRAVING an Egg-Wich and then I thought, I eat a lot of eggs ~ at least they are good for me.
2 slices of Trader Joe’s FF Multi-Grain Bread, 1 tsp Whipped Butter, 1 “Fried Egg” sea salt and black pepper. Fast, delicious and 6 points+.
I added a side of “banana chips” to balance it out.
Nom, nom, nom….I could honestly eat this every day. Ok, well, like 2 or 3 times a week
I have been excited all week for today’s lunch because I finally got to meet up with Tracy of TJ’s Test Kitchen! We actually have known each other forever and ALWAYS talk about meeting up. Now that she lives so close to where I work, lunch was in order.
We went to the Napa General Store Café because they have a fantastic menu and you get to eat outside in the sunshine!
I always want to buy stuff as I walk through the store to get to the restaurant but never do.
I LOVE that TJ is totally a “sharer” like me and agreed to split everything with me so we could try it all.
We both agreed that the Fresh Spring Rolls sounded delicious.
Enoki & Oyster Mushroom Spring Rolls ~ with ginger dipping sauce.
We each had 1 and well, they needed a different dipping sauce. They didn’t really taste like anything and the ginger sauce was just vinegar. Now, if you gave me a peanut or plum sauce, I probably would’ve said they are spectacular.
We both had fun snapping random pictures of everything include the cool plates.
Next up was the MAIN REASON I go to the Napa General Store Café. They have the one of the BEST Chinese Chicken Salads you will ever eat.
Chinese Chicken Salad
Shredded chicken breast, local cabbage, scallions, toasted almonds, black sesame seeds, crisp won tons & house made Asian dressing. I counted my half as 7 points+.
I have ALWAYS wanted to order this Spicy Chicken Clay Pot (it smells amazing when it come outs steamy hot), but, never have……It didn’t take long to say, ummm, YES PLEASE, when TJ said, let’s try it!
Clay Pot Chicken
Caramelized boneless chicken with sweet and spicy sauce & jasmine rice
It’s not spicy AT ALL, but, I did LOVE the sauce. I might have actually drank it if it wouldn’t have embarrassed her
I had 1/2 the pot and half the rice for 8 points+
After lunch we decided to walk around down town because TJ has a “thing” for Tyler Florence and well….he had a store in town!
I totally think I just had a thing for taking random pictures of kitchen utensils today because I LOVED the forks at the top.
Another thing that makes TJ awesome is she LOVES coffee like I do. We stopped at the Napa Valley Coffee Roasters for an afternoon cup of joe.
I had a 12 nonfat decaf latte (3 points+), you know, so I could check off my dairy today
We continued being tourists (even though we both live hear) snapping random pictures as we walked back to the car.
OH and there might’ve been a little posing in front of the hubcap artwork too.
We both totally joked how The Husband and her man HATE IT when we make them take pictures like this….obviously, we don’t mind
I had such a great time having lunch with Tracy and she totally went above and beyond by giving me the coolest gift in this cute Chinese food box.
She actually made me a bunch of Bracelets and a Bracelet Earring Set. I LOVE beaded jewelry and will totally wear all of them. Thanks again TJ ~ you are such an awesome friend!
I was actually planning on cooking up a fancy meal for The Husband tonight off our menu plan, but, when, it came down to it, I just wasn’t THAT hungry and he asked for salad.
SUPER SIMPLE 5 MINUTE CHEF SALAD
* Organic Romaine
* Organic Cherry Tomatoes
* Organic Bell Pepper
* Organic Cucumber
* 1/8 AVOCADO (1 points+)
* A few chickpeas that I put on after, about 1 Tbsp (0 points+)
* 1 slice Low-Fat Swiss (2 points+)
* 2 oz Smoked Turkey (2 points+)
Topped with 2 Tbsp Newman’s Light Lime Vinaigrette (2 Points+)

What is your favorite type of salad to make or buy?
I have to say I absolutely LOVE a good salad! Chinese Chicken Salad or any salad from Jacks’ Urban Eats are my favorite to buy….To make at home, my Spicy Asian Peanut Broccoli Slaw and any salad that has AVOCADO!

The salad I’m having for lunch today is pretty much a favorite…salad greens, cherry tomatoes, slivered almonds, green onions, cucumbers, small amount of crispy rice noodles, 2 ozs. oscar mayer carving board chicken pieces, and Trader Joes asian peanut dressing. Thanks for recommending this tasty salad dressing!

I love a mixed greens & herb mix that my local grocery store carries…all the bits of herbs just keep it fresh and every bite tastes different ;0) Love seeing your local pictures, Danica – being from NY, its fun seeing how the “other half” lives. I’ll have to do the same on my site for you guys one of these days.

My lunch salad lately has consisted of: 2-3oz Boar’s Head chicken or turkey shredded; big bowl of mixed greens: broccoli slaw, spinach, and spring mix, sliced roma tomato, 1/4 FF feta, 3 small sliced red, orange, yellow peppers, thinly sliced red onion, 1 Tbsp. walnuts, 1 Tbsp. cranraisins, and 2 Tbsp. My favorite salad to make as of late – Chicken BLT. Grilled chicken, center cut bacon, lettuce, tomato and light ranch for dressing. Awesome and usually comes in around 7 PP depending on how many oz. of chicken. YUM.

I love the Mediterranean Chop Salad at Loki’s Cafe (inside Valhalla Health Club)…not that I can’t make it at home…but there is something about having it served on a beautiful plate somewhere else. ; ) Kalamata olives, tomatoes, roasted peppers, cucumbers, artichokes, feta cheese and garbanzo beans over a bed of baby mixed greens with Fat Free Raspberry Vinaigrette. (By the way, if you like rasp.vin. dressing…Kraft’s Lite is really tasty. In Ohio, I complimented a cafe on their outstanding house dressing..and she told me it was Kraft’s Lite. LOL.)

Danica I just had to laugh. Last night I kept dreaming about breakfast on Saturday morning. I wanted to make Waffles, with my daughter home from college I figured a big breakfast was in order, but secretly I dreamt about Waffles all night.
I made them from scratch as low cal as I could used ff cool whip, sugar free syrup and sliced strawberries and blackberries on top. Fantastic. My waffle maker is large and makes 4 nice size squares. Put all the info in the recipe builder and each square is 5 pts plus. I had 3 because I just had to get it out of my system and I totally enjoyed every bite!!! Looks like you had a great time yesterday!!

My husband and I call my creation ‘big salad’. It is very big! I start with two plates a handful of dark lettuce greens on each, than handfuls of diced carrots, celery, red pepper, cukes, sugar snap peas, tomatoes, 2 tbsp of crumbled feta, he is a vegetrain, so chix patty for him and shelled edamame or grilled chicken breast for me. Then, some sunflower kernels – I will top mine with garlic vinegarette and he as light honey mustard – these salads are so yummy and so hearty we feel very satisifted when we are done. Basically, I will put any and all veggies I have on hand! At least 3 serving of veggies!
