I totally have to give props to my sister for this Instant Pot Hamburger Soup Recipe idea. She sent me a meat & potatoes version of a Hamburger Soup recipe that I knew I had to put my healthy spin on it. I actually ended up not really following the recipe but I braved experimenting making this on my own in my Instant Pot using tons of fresh veggies, herbs, lean meat and it turned out amazing.
This soup is so good – it’s thick, hearty, chunky and packed with this rich, herby tomato flavor like a much richer minestrone.
I love that you put everything in the pot, set it and wait 25 minutes.
Now if only it had a better name – Enjoy!
INSTANT POT HAMBURGER SOUP (Print It!)
INGREDIENTS:
- 1 Tbsp olive oil
- 1 lb 93% lean ground beef
- 1 onion, diced
- 4 garlic cloves, minced
- 2 celery stalks, diced
- 2 carrots, peeled & diced
- 1/2 bell pepper, diced
- 1 Tbsp golden brown sugar
- 14 oz Mild Rotel diced tomatoes with green chillies
- 1 1/2 cups tomato sauce
- 4 cups beef broth
- 2 tsp dried oregano
- 1 Tbsp Italian seasoning
- 1 tsp crushed red pepper flakes
- 2 cups dry macaroni
- 1/2 cup fresh parsley, chopped, optional
INSTRUCTIONS:
- Turn Instant Pot to saute. When ‘hot’ add olive oil, ground beef and onion cooking until almost browned, about 8 minutes. Hit cancel.
- Add remaining ingredients enduring the noodles are covered. Sealed Instant Pot and turn to pressure cook on high for 4 minutes. It will take about 20 minutes to pressurize before counting down those 4 minutes. Quick release, stir and serve.

After sauteing the beef and onion, add all ingredients ensuring the noodles are covered.It’s totally optional to add a bay leaf or thyme stem. I usually do this with soups but only if I have them on hand. Just remove before serving.Pressure cook on high for 4 minutes, quick release and serve.
