Happy Sunday all! We have had the most amazing spring weather this weekend that totally made it worth it to get up an hour early today. We were up at 6 am to get ready for our fun filled day.
I am pretty proud that despite the fact we needed to get to the store (translation ~ we were all out of eggs!), I managed to find a way to make Healthy Egg Roll. I just improvised by using the liquid egg whites I bought for Egg White Fluffies to make “Mock Eggs” LOL.
I wanted to boost the protein up this morning since I knew we were having a late lunch. I topped my eggwich with a Morning Star Hot & Spicy Sausage before Wrapping it up and Rolling out to my Weight Watchers meeting. (SF + 1 WPA) – 6 points+
Although the scale did not reflect my efforts this week with a .2 lb loss, I am proud of the fact that I tracked everything while sticking to 100% Meatless. It is weeks like this that I focus on all the Non-Scale Successes and know that if I keep at it, I will see better results next week for sure ~ Persistence over perfection!
Every time we go to any of the Antique Fairs, The Husband always gets a hot link or sausage. Since he is sticking with me on the Meatless Thing, he actually tried a Veggie Dog.
I will be the first to admit, Veggie Dogs freak me out….but, I braved 2 bites and it wasn’t bad. Then again, the dog was fully loaded with toppings (SF + 2 WPA) – 2 points+
We met my family for lunch to talk about our trip to Australia and to share pictures. My Sis picked Joe’s Crab Shack on the river. After scowering the entire menu and asking the Waitress if there were any Vegetarian options, we learned there were 3 options.
1. Any side dish, i.e. french fries, broccoli, etc.
2. Ordering any dish without meat, although there were only 3 options – salads, nachos and pasta.
3. Having Mozzarella Sticks
The Husband picked mozzarella sticks to start and I decided it was worth it to have a stick.
(SF + 3 WPA) – 3 points+
Then, he moved onto the Pasta without shrimp or sausage (so proud!!!)
I had the Fried Chicken Salad without chicken or bacon and with ranch on the side. It was actually pretty tasty even though there wasn’t really much to it. (SF + 6 WPA) – 6 points+
On our way home we stocked up at Trader Joe’s and prepped for the week. I made Harvest Grain Salad, hard boiled eggs and a Rosemary Roasted Butternut Squash and Barley Salad with Cranberries for me. I plan on serving this over mixed greens with a sprinkle of roasted almonds. The recipe is coming up this week.
Have I mentioned to you all that I love this new Weight Watchers Veg Power Book? I picked it up last month and flagged all the recipes I want to try.
Tonight, we made the Italian Potato & Spinach Torta on page 94. It does take a little bit of time to make, but, it is definitely worth the wait.
Start off by boiling the 1 1/2 lbs of Yukon Gold potatoes for 20 minutes.
Meanwhile, sauté 2 tsp olive oil with 4 minced garlic cloves and a pinch of crushed red pepper flakes (my addition).
Add 1 package of spinach, sea salt and pepper cooking just until wilted.
Set aside and preheat the oven to 375 degrees.
Whisk together 1/2 cup fat free milk with 2 eggs and a little sea salt/black pepper.
Stir in 3/4 cup of Italian Cheese (I used reduced fat mozzarella and parmesan as it is what I had on hand).
Spray a 9 inch pan with nonstick spray and coat with 2 Tbsp Italian Bread Crumbs.
Drain the potatoes, mash and allow to cool for about 5 minutes.
Stir in the spinach.
Then, the egg and cheese mixture.
Pour into the prepared baking dish and bake at 375 for 25 minutes or until golden on top and heated through.
Sprinkle with the remaining 1/4 cup of cheese and bake an addition 3-5 minutes until the cheese is melted and slightly browned.
Allow to sit for 5 minutes, slice into 4 squares and serve.
Yup, you totally get 1/4 of the pan for 8 points+ (SF)
Garlicky, cheesy, creamy potatoes with layers of fresh spinach and a crunchy breadcrumb crust ~ what’s not to love?!
Served up with a side of mixed greens tossed with balsamic vinegar.

- SF: 12 WPA used, 37WPA remaining (DP: 28 daily points+)
- 100% Meatless!

I have fallen in love with Morey’s Fish Creations frozen fish and shrimp. I love the tilapia and the salmon. Wood grilled, seasoned, yummy, and only 4 points+ for a good sized piece. You can’t have any, though. Fish is meat. 😉

Ok, so I can’t get my carniverous Aussie to try the meatless thing, but he will do a few meals :)That recipe from Veg looks great and I was able to stop by a local WW meeting store and buy a copy! No TJ’s in South FL so I need a recommendation for a brand of turkey bacon, anyone?? This week for us: grilled cheese & tomato soup (Pacific organic/low sodium), fish tacos (using tilapia), chicken sausage sandwiches (Applegate farms from Publix) & Alexia sweet potat puffs, Wed night is our American weddin anniversary so maybe a night out for peel & eat shrimp and a big glass of wine 🙂 Can’t wait to read what others are cooking up!!

I’ve actually been doing the Egg White Roll-up for the last month and a half now since I have issues with yolks (ie – they cause me pain for some reason). You kind of miss the creaminess the yolk give, but all the flavour remains ^_^.
This week’s menu is the Egg White Roll-ups for breakfast, the Spicy Sesame Noodle Salad for lunch (Mon to Thurs), my Meatless Mexican Beef Skillet on Friday (meatless since I use Yves Veggie crumbles), and a simple Italian-stle omelette for lunches over the weekend.
What can I not wait to have? Easter Supper! I have a gorgeous Glazed Baked Ham with generous sides planned that come out to 13 points for the meal (dessert will be extra). So far my Easter is clocking in at 24 points. Who says you can’t indulge and stay within your points? ^_^
That recipe sounds good and I like that it uses real eggs and not egg substitute/only whites. Sometimes WW recipes get a little too fakey with the ingredients and substitutes, but I like they have been moving towards more whole foods with the Points+ and SF campaigns. I plan to try your egg wrap this week!! I am also making taco casserole. I was going to make crockpot chicken but forgot to pull it out of the fridge this morning before work so I guess I’ll need a plan b for tonight. 🙂
Make sure to try the Greek spinach and feta lasagna from the Veg Power book. Yum, yum.

Still working on the Simply filling technique and now you go and do me vegan! I am really trying to follow your examples and I really want to eat healthier, but have a question, do you use fresh garlic or since I am the only one in the house to eat garlic is it cool to just get the minced in a jar. Because my husband doesn’t like the smell of a lot of garlic!

I prefer fresh garlic, but, you do not have to use fresh garlic in the recipe. Jarred garlic and/or garlic powder 1-2 tsp. would work just fine.

I use the Mission Extra Thin Yellow Corn Tortillas. They are 1 points+ each and can be found at Target, Safeway and Raley’s if you have one near you.
