Meatless Monday: Pasta Pizza

Happy Monday all!  I have so many new ideas of recipes I want to try after seeing all your menus this week on yesterday’s post.  Monday is one of my favorite posts not only because I get to see your menus, but, also it’s Meatless Monday!  How many of you went Meatless today?

Any Meatless day needs to start with…..Healthy Egg Rolls.  I actually “thought” I might try something new today…really.  Maybe tomorrow LOL. 

(SF + 1 WPA ) – 5 points+

I had zero motivation today to get to the gym and tried to convince myself to do anything but go.  I even texted The Husband and asked Spin or Costco, Spin or Anniversary Gift Shopping….every single time, he said ~ Spin ~ you can do all that “other stuff” after work.

So ~ I went to Spin and I loved it!  My favorite instructor was there and she is the only instructor I think I’ve ever believed makes you burn that 500+ calories they say spin burns.

Lunch was a 5 second salad I put together this morning.

Double Protein Power ~ an egg + edamame

Healthy Fats ~ 1 Tbsp. dry roasted almonds, Chew Power ~ dried berries all on top of crunchy mixed greens with cherry peppers and 2 Tbsp. Balsamic Vinaigrette. (SF) – 8 points+

After all the Lay’s Sriracha Chip talk this weekend, I decided to bring in a bag for the office so I could try a few. 

The verdict ~ Eh, not bad, but, sriracha does not have sour cream or cheese in it.  I think this is the first chip I have ever eaten that I think I can actually just pass on. (SF + 2 WPA) – 2 points+

My afternoon Power Snack ~ Fage 0% Strawberry with a nectarine~ definitely needed before heading to Costco.  I have to say if you have to go to Costco or Sam’s go on Meatless Monday….every single sample had meat which made it even easier to pass up!

(SF + 1 WPA for the jam) – 3 points+

Are you all sitting down? You might just be shocked….after talking about Spaghetti Pizza for over a month now, I finally broke down and made it!

I didn’t exactly make it how my mom used to make and I didn’t exactly follow the recipe….

But, I definitely made a new recipe that is a keeper that will be made again for sure!

I was a little afraid when everything hit the pan that it may not turn into “pizza” since I’ve never made anything like this before…..

After the first flip, I knew the recipe was golden (no play on words intended) ~ hello Pasta Pizza!

Topped with a Basil Bow Tie according to The Husband who absolutely loved it and asked when I will be making it again.  I told him I thought my photography looked like one of the Old Weight Watchers Circa de 1974 Recipes when they made you eat LIVER!….

(SF + 3 WPA) – 8 points+ per wedge – it makes 8 wedges!

The recipe is coming up tomorrow if I can find the time since we will be celebrating “Our Birthday” – our 9 year Date-i-versary….Open-mouthed smile

    I know that if we ever tried meatless in my house my Dad would have a fit. He’s a pure meat-atarian and will never change.

    Thanks for the heads up on the Sriracha Lays. Disappointed to hear that these things are less about heat and more about a recreation of Ms Vicky’s Sweet Chilli and Sour Cream chips. I remember a time when BBQ chips were too hot for a lot of people to handle, then the chip companies had to go and tone down the heat. Biggest mistake they ever made. Now the so-called “hot” chips are all tame and lifeless.

    Spaghetti Pizza… When do I have an image of iCarly’s Spaghetti Tacos in my head now?

    I went through the list of 1974 recipes and I went “ugh!” at every single one… no exceptions. Dear Goddess above, did we really eat that… that… I can’t even find a polite term to describe those recipes!?!?!

    I have always preferred to celebrate the anniversary of our meeting vs. Marriage. Theree’s only two of us in the house also. Always find it hard to keep Costco food fresh until we are able to eat it all!

    Oh I can’t even pretend like I would eat any of those old recipes! Yuck and double yuck! They do make me laugh though. 😀

    Spaghetti pizza sounds interesting. Is it filling, though? I don’t really eat much pasta because the correct serving size is just never enough for me — I always want seconds and thirds!!

      You know I am the same way with pasta – it never really fills me up. I have to say though, that this Pasta Pizza definitely is satisfying and you can always add a salad or veggie side if you feel like you want more with it.

    Danica, I’ve been a reader of your blog for a couple years and a follower on FB and this might be my first comment?! The truth is, I’ve tried many of your recipes and loved them all… as has my picky husband. Most nights in our house are meatless, so I’m loving your meatless day recipes. I traditionally don’t love eggs, but decided to try your Healthy Egg Roll and it was ah-mazing! Thanks so much for opening my eyes to the yummy-ness of a “fried” egg when combined with cheese and the extra-thin corn tortillas.

    I do have one question (since I’m following ww on my own and don’t have the e-tools recipe builder) — in this post, you write that the healthy egg roll is 5p+ but in the recipe list, it says 4p+… does it depend on the cheese? I don’t use the sriracha if that makes a difference? Thanks so much for all the awesomeness that is your blog 🙂

      Thanks for reading and letting me know you enjoy my recipes ~ I really appreciate it! With respect to the eggrolls, it varies depending on the type of cheese I use. Sometimes I use cheese that is 1 points+ a slice and other times I use a cheese that is 2 points+ a slice.

    OMG, I love that you linked to that site, it’s my go-to place to make me laugh so hard I can pee my pants! I even own the book!
    I would do the snack on the stick, because, let’s be honest, i’m a ridiculous coffee addict 😉

    Oh wow…hilarious! I could never have stayed on plan on ww circa 1974. Did people really eat vegetable congealed salad? Yikes! For meatless Monday I made eggplant parmesan thanks to trader Joe’s frozen eggplant cutlets and their creamy tomato sauce. Baked in the oven with a little low fat mozzarella. Amazing!
