Summer of POM: Summer Berry POM-Tini

Hi everyone!  We are in the midst of getting ready for VEGAS!!  I actually created this drink last year while in Vegas so I thought it was only appropriate to bring it back before we head out.  It’s one of my favorite drinks and we make them all summer long.

The FIRST RECIPE up this week is COCKTAILS/MOCKTAILS!!!

As you all may have noticed, I am not too BIG on drinking my calories/points.  So, when, I do, I want to make it worth it.  This Summer Berry POM-Tini includes Fresh Summer Berries to make your cocktail more than just a drink.  It’s light in calories, refreshing and the excellent start to any summery BBQ.

 

Summer Berry POM-Tini Recipe

Fresh Summer Berry POMTini

INGREDIENTS:

1/4 cup fresh berries ~ blueberries, raspberries, strawberries, etc.

Crushed Ice

3 oz POMWonderful 100% Pomegranate Juice

1 oz 100% Pure Orange Juice

1 oz Vodka or Parrot Bay Coconut Rum, optional

1 oz Club Soda or Carbonated Water

Lemon slices, optional

INSTRUCTIONS:

1.  Place 1/2 your berry mixture on the bottom of a tall glass and fill glass to the top with crushed ice.  The ice will melt as the liquids are poured in so you want to make sure you have plenty.

2.  Start by pouring your POM juice, then, your Vodka or Rum, if using.  Slowly pour in your orange juice and then top with Club Soda leaving enough room (about 1 inch) to add your remaining fresh berries.  Garnish with lemon slices and ENJOY!

Makes 1 Refreshing Cocktail or Mocktail (sans alcohol)

NUTRITIONAL INFORMATION PER SERVING using (Calorie Count) (3 points+):

152 Calories, 0.1 g Fat, 0 mg Cholesterol, 10 mg Sodium, 21.4 g Carbohydrates, 1.3 g Fiber, 17.2 g Sugar, 0.2 g Protein

NOTE: I served my Summer Berry Pomtini on the rocks, however, you could easily make this a Blended Pomtini by freezing your berries and whirling it up in the blender.

STEP-BY-STEP:

The star of the show for this drink is definitely the POMWonderful Pomegranate Juice ~ it adds a little sweet and a little tart.

POM Wonderful Pomegranate juice

I picked up a mixture of Fresh Summer Berries (Raspberries, Blackberries, Blueberries, and Strawberries) at Whole Foods.  You could easily create your own mix by buying LOCAL at the Farmer’s Market.  Nectarines and Peaches would taste fantastic in this mix too.

Whole Foods Fresh Berry Blend

Start off with berries as your first layer, about 2 tablespoons

Fill your glass to the top with crushed ice.

Add in your POM.  You can “free form” pour your juices or use your measuring cup to be exact.

I didn’t use any Vodka/Rum since I made mine as  MockTail, but, if you were, you would add that then top with a 1 oz splash of Orange Juice.

Be sure to pour slowly so you get layers of color along with layers of flavor 😀

Top with 1 oz of Club Soda ~ more if desired since it’s 0 calories!

Be sure to leave room for your Summer Berry Drink Toppers.

I LOVE drinks that you can eat ~ fresh summer berries on top and nice chilly ones on the bottom!

I finished my MockTail off with  a small splash of POM on top for more color & POMtastic flavor.

    Your pomtini looks so refreshing and easy to make (big plus). I’m not the best bartender, so at our bbq’s its always the alchohol and soda or juice mixer… this would be so pretty in everyone’s glasses!
