Salad Bucket…

Happy Monday all!!  I am so glad that Meatless March is officially over today….so much so that I just couldn’t wait to dive right into this HUGE platter ~ Holy, Huge BBQ!  Yup, meat never tasted so good…..and I ate it all….every single bite!  I pondered ordering a side of bacon too, but, just didn’t have any room left….

Pretty funny, right?!  I couldn’t resist ~ I was tempted to Google a bunch of meat images to post but was afraid of what I’d find.

Today actually continued on in the usual fashion with a Sriracha Swirled Healthy Egg Roll.  My squiggly line has now grown to cover the whole tortilla. (SF + 1 WPA ) – 4 points+

After my dentist appointment, I stopped for a Dirty Latte~ It’s been way too long Starbucks!

Grande, Nonfat, Decaf Latte with 1 pump Mocha (SF + 1 WPA) – 4 points+

I had plans today to head out for Kabobs with my co-worker, but, we changed our minds and decided to head to Whole Foods to build salads….

Let’s just say I put the Kitchen Sink in my salad bucket!  Let’s see if I can list it all

~ Mixed greens, romaine, carrots (2 colors), edamame, corn, peas, chickpeas, a few cucumber slides, 2 cherry tomatoes, 1 Tbsp. sunflower seeds, 1 crostini and….drum roll ~ 2 oz. chicken breast!

Then, I piled on a few toppers….a little Szechuan Kale….

Marinated mushrooms and peppers (my favorite thing at Whole Foods!)

Then, as if we didn’t have enough veggies, we bought this salad to share. I used this Cabbage Crunch Salad as the final topper for “dressing” my salad.

I probably had like my 10 a day in this box but it all tasted so good!  (SF+2 WPA) – 5 points+

I think the rainy weather definitely spikes my hunger levels because all day long I was hungry.  Later afternoon, I grabbed two cuties and a light string cheese.  (SF) – 2 points+

This folks is how you know this Vegetarian Lasagna is good.  I gave The Husband the option to cook anything he wanted, to go out to his favorite steak place or to have leftover Vegetable Lasagna.

Can you believe he picked the Veggie Lasagna?!  It is even better the next day. (SF) – 9 points+

And, because I didn’t have enough veggies at lunch, I had a cup of sautéed chard.  I added this to our meal to help me not feel so hungry.

It worked for about 2 hours ~ Dessert FAGE 0% Blueberry Acai.

(SF+1 WPA for the jam) – 3 points+

I will be back tomorrow with my Meatless March thoughts and April resolutions.  The menu for this week is sort of up in the air and TBD.

    Hahaha. You got me. I saw those 3 corn muffins and was figuring points and hoping you had saved up weeklies. LOL I took a cell phone pic of an old ultrasound of mine this morning. I have 4 kids, and sadly everyone seems to be very against us having any more. Well, I’m kind of against it, too. LOL Anyway, I texted out that pic and “guess who?” I fooled nearly everyone. It was too funny.

    I’ve been meaning to ask you how you cook your corn tortillas for your breakfasts? I keep on forgetting to ask 😀 I made an egg beater and corn tortilla for breakfast this morning although, I always manage to burn or just about to burn my tortilla in the pan (crunchy but bendable)

    I was saying to myself OMG how could she!!!!???? Not even Jay could finish that dish……..and if you did eat it you must feel sick, in more ways than one!

    The lasagna to me looks more yummy than ribs any day!

    Hahaha, you got me too! I was thinking that you should have asked the Husband to make his famous top secret bbq tri tip or ribs, not eat that whole platter!! lol Glad you didn’t.

    Totally had me, even a day later, and I thought well, she deserves it but how in the heck did she have room for that whole platter after a month of veggies?

    Do you happen to remember how much you paid for your salad? I love the food bars at Whole Foods but I always feel like I’m paying way more than I’d pay in a regular restaurant.

      Hi Jackie,

      You know, I always joke I can usually never leave Whole Foods without a $10 salad. However, this time, I managed to get away for $6 – I believe the key was not adding really any meat and/or protein or dressing.
