Happy Friday Eve all! Today was such a productive day and I am feeling super accomplished. I got the screw removed from my tire, checked off an early AM walk, had a fun lunch with my coworkers, knocked out a ton of work and tried a new recipe.
Breakfast was quick as I wanted to be first in line to get my tire fixed.
Sandwich Bros Turkey Sausage Egg White Flatbread (4 sp) with berries.Mid morning I was starving so I snacked on a cup of watermelon and Emeralds cashews (3 sp).
Our lunch today was at Work of Flame – I love the name and their food.
I had 2 of these homemade chicken potstickers (3 sp).We all ordered lunch combos that started with Won Ton soup that was so good (2 sp).I had shrimp and green beans with black bean sauce and steamed veggies (2 sp). I left the rice behind and traded it for my 1 sp fortune cookie.I decided to put a healthy spin on this Pimento Sausage Mac & Cheese recipe to satisfy The Husband’s craving for dinner tonight.
Here is how I modified it and got dinner on the table in 30 minutes.
While the pasta cooks, prepare the cheesy sauce. I “fried” 4 Roasted garlic and mozzarella chicken sausages in non-stick spray over medium high heat.Remove the sausage and melt 1 Tbsp butter reducing heat to medium.Sprinkle flour and whisk for 30 seconds.Pour in 1 3/4 cup 1% milk and continue whisking until slightly thickened, about 3-5 minutes. Add salt, pepper and a little cayenne pepper.
Add 3 oz light cream cheese, stirring until melted. Then melt in 7 oz reduced fat cheese.Add sausage, pimento peppers and cooked pasta. Gently stir folding in all that cheesy goodness with the pasta shells, peppers and sausage.Sprinkle with parsley to brighten the dish and serve. This makes about 10 one cup servings for 8 Smartpoints.This pasta is so filling and I love the garlicky sausage with the smokey peppers.
