Simple Carne Asada Tacos & My Weekly Menu!

Happy Sunday all!  Thanks for all your nice comments on my Healthy Super Bowl Recipes & Menu Ideas.  I have fun each year building on the list and adding new recipes I’ve tried and/or seen.  It is really hard to pair them down because as you all know, I have a “slight” recipe collecting addiction and there are so many fantastic ideas out there ~ hello pizza party, nacho bar and wings!

I am so freakin’ excited to share my weigh in this week ~ I was down 2.8 LBS bringing me only .6 lbs away from my 7 lb Valentine’s Day Goal!!

The Husband did awesome too ~ he lost 4.2 LBS ~ so proud of him for making his first week all about healthy swaps and tracking!


I am so glad my FANTASTIC leader had breakfast ready & waiting because I was STARVING this morning.

I started with 2 B’s ~ Banana & Sara Lee Blueberry Bagel (3 points+).

Plus 7 raw almonds for 1 points+.

After the meeting, we headed cover to The Husband’s favorite Starbuck’s ~ Notice anything in the picture?!

He is ALWAYS doing that to me and wondering if I’ll notice someone is in the picture ~ clown!

Venti Iced Coffee with 1 Pump Mocha & a splash of half & half (2 points+)

My MOM Rocks!  I know I always tell you all this, but, seriously she does.  I have been trying to locate these Blue Diamond Salt n Vinegar Almonds since July when one of my friends gave me some.

I probably cannot even count how many stores I have been in looking for them…..but, My Mom actually went to Blue Diamond and bought me a case for my Birthday!!!

Now that IS LOVE!!! It’s the little things ~ thanks MOM!!!

5 points+ for 1 oz ~ salty, crunchy, vinegary and absolutely amazing!

The Husband was all excited to get his grill on today at lunch for our friends.  I knew all I had to do was buy his FAVORITE Bill Bailey Carne Asada and he would be all about cooking for us Open-mouthed smile

I told him he could pick out any of the Mission Tortillas yesterday when were stocking up for the week.  I was pretty excited when he showed me these Corn & Whole Wheat Blended tortillas.

But, I was REALLY bummed when I looked at the ingredients today ~ they contain transfat and what exactly is interesterfied…..note to self, stick to the Trader Joe’s version :/

2 points+ each.

I made up TWO Carne Asada burritos topped with 2 oz Grilled Carne Asada and 1/2 oz of reduced fat sharp cheddar cheese.

Then, I topped them with a bunch of spice and crunch ~ jalapenos, romaine blend, tomatoes, green onions and 1/8 avocado.

8 points+ for both ~ DEAL!  I added hot sauce and drizzled with 0% Greek Yogurt post picture.

Dinner went together even faster than lunch thanks to The Husband who decided he was doing all the “cooking” today.

I started with a “Husband Salad” ~ he whipped this up for us for dinner because it’s ZERO points+.  I am pretty sure he is IN LOVE with anything that is ZERO!  Topped with 1 TbspNewman’s Lite Lime Vinaigrette (1 point+)

Trader Joe’s Sharp Cheddar Squares (4 points+) and 8 Social Crackers (3 points+)….quite possibly my FAVORITE thing ever when you do not want to cook….LOVE!

Simple, delicious, totally random, but, exactly what I was craving.

HERE IS WHAT IS ON THE MENU THIS WEEK:

  • BLTA’s!!!
  • Grilled Tri Tip, Garlic Fries, Grilled Asparagus
  • Ellie Krieger’s Spicy Fried Rice with Cashews
  • Shrimp Scampi, salad
  • Kale, Kielbasa and White Bean Soup
  • BBQ Chicken Sweet Potato Fries, Green Beans or salad

I also have recipe makeover requests for Butternut Squash Lasagna and Mini Tamale Pies that may make the menu this week or weekend!

    Here is my menu for the week: M= Jambalya and corn bread for the hubby and kids …I work tonight at WW till 7 so when I get home I will have a frozen ww with salad.
    T=Roast Chicken, rice, and veggie.
    W= Wedding Soup and bread and salad
    Th=left overs!
    F= YOUR Bubble Up Pizza, and Salad
    S= subway we will be tailgating at SuperCross!!

    What a fantastic WI!
    Yesterday I made a delicious Kale & Sausage cassarole – AMAZING! I’m enjoying the leftovers this week along with some other things.

    WOW! Congrats to BOTH you and the Hubster for having a FANTASTIC WW Week! Accountability is so important and spousal support is the best type of accountability! I have been making hard cooked eggs the way the guy in the video does and guess what? They turn out as perfect as yours! Every day I scan through all my e-mails and open yours first! Keep up the great work!

      Hi Wendy,

      We do not really have a recipe for the BBQ chicken. We just grill the chicken – either drumsticks or breasts, then, during the last 10 minutes we baste/rotate it with BBQ sauce.

    Hi Martha,

    I buy the Bill Bailey Carne Asada at Sam’s Club, however, I have seen it sold at Super Targets as well.
