Happy Friday all! I have to say all your answers to yesterday’s post totally have me craving Mexican food. I love Jill’s idea of making Slow Cooker Chicken Tacos too ~ Thank you, I am definitely trying your recipe – it sounds so easy!
This morning I woke up craving my Simply Filling Sweet Potato Hash because I knew it would also be a perfect Simple Start breakfast to start my day. There was only one catch, I didn’t have sweet potatoes….minor detail! So I improvised making one of the best Ham, Egg & potato Hashes I’ve ever had.
I started out by chopping 1/4 of an onion, 1/4 of a bell pepper and the rest of our ham, about 2 oz..
I added it to a nonstick pan that I preheated over medium heat and sprayed with a good coat of nonstick spray.
Topped everything with 1 cup of Ore Ida Western Hash Browns, Paprika, Garlic Salt & Black Pepper.
I stirred it all up and “fried” it until everything started to get golden. You may need to use additional non-stick spray.
I cracked an egg over the top and scrambled it in.
Removed the pan from the heat and topped it with a little fresh tomato and basil to add a nice sweetness and color.
So freakin’ delicious and packed with protein! I love how the onions caramelized a bit with the ham adding little salty bites with each peppery potato.
100% Simple Start/Simply Filling or 5 points+ for the entire dish if your counting. I packed mine up togo and topped it with Sriracha ~ My Ketchup
Breakfast kept me full for 5 hours ~ before lunch, I ended up nibbling on a little fresh pineapple as I cut it up for the weekend and a few pomegranate seeds too.
Lunch was a repeat from last nights tasty turkey taco salad (say that three times fast!)
(SS/SF + 2 WPA) – 7 points+
All week long I have been looking forward to my birthday celebration today with all our friends at Hisui Steakhouse ~ it’s our annual tradition.
I love that we all share two of the best things there ~ Sushi & Teppankyaki where they cook your meal in front of you.
First up ~ Miso Soup (SS/SF) – 2 points+
I am always amazed at how they make this simple sesame salad taste so amazing ~ it’s all about their homemade dressing. (SS/SF + 2 WPA) – 2 points+
We ordered my two favorite rolls to share ~ On the left, Joe’s Roll and on the right, Michael’s TNT Roll.
I honestly could eat just their sushi and be happy, but, I refrained and had one of each counting them as 1 points+ (SS/SF + 2 WPA). – 2 points+
While Teppanyaki is not “technically” Simple Start/Simply Filling I’d say it’s fairly close when you break down what goes into it. The thing that puts it a little over the top is they use more oil than we would at home, however, other than that, it’s all about lean meats, fresh veggies, soy sauce, garlic and teriyaki ~ close enough for me, that’s what I call “Simply Filling Like”.
The Chef made a smiley face before cooking on the grill for my birthday
Then, he got down to business whipping up some amazing stir fries for us that all started with a volcano onion to warm us up.
When it comes to Tepannyaki, I am all about 3 things.
The Shrimp ~ I could eat a ton of these! (SS/SF) – 4 points+
The Veggies ~ yep, I could eat all of these too and would consider trading my shrimp for them.
The sprouts are good too as they pick up all the flavors of the teriyaki sauce they use.
(SS/SF) – 3 points+ for both the veggies & sprouts
Last, but, not least, the Fried Rice! I can have steamed rice anytime at home so when I go here, I always order their house made fried rice.
I am really proud of the fact that I only ate half my rice ~ my mouth definitely wanted more but when I stopped to think about it, I was satisfied and didn’t eat any more. (SS/SF + 4 WPA) – 4 points+
We topped everything off with a scoop of vanilla ice cream (SS/SF + 4 WPA) – 4 points+
Here are my stats today:
- Simple Start Day 12: 14 WPA used, 5 WPA remaining
- 33 Daily Points+ 7 WPA used, 42 WPA remaining
- Here is my FitBit Flex Dashboard!
Tomorrow is officially my birthday and I cannot wait to see all the surprises The Husband has lined up. So far, I know he is taking me for a spa day during the day and we are meeting my family for sushi tomorrow night. I cannot wait and may not be back until Sunday with a recap of it all.
Night all!
