Simply Filling Turkey Meatloaf Muffins

#FlashbackFriday with these easy 1 WWFreestyle Smartpoint Turkey Meatloaf Muffins. Fun fact – they are Zero Smartpoints if you use extra lean ground turkey breast. Make up a batch for lunch or dinner, but, be sure to freeze a few for days when your short on time and need a quick meal or snack.

I have been craving these hearty, Stove Top Stuffing Turkey Meatloaf Muffins ever since my friend introduced me to them last year.  The thing is most prepackaged stuffing mixes I found did not have an ingredient list I really liked and my friends at Trader Joe’s thought I was just a little crazy asking about stuffing already lol.

I realized I was trying to convince myself to “search” for a package mix that wasn’t even Simply Filling.  I could’ve probably ventured out to try to make my own stuffing from scratch using “light bread”, but, I just wasn’t feeling quite “that” ambitious.  I totally blame the cool fall weather for that and for my sudden need to make these tasty Simply Filling Turkey Meatloaf Muffins.

I improvised by adding in a some healthy oat bran for moisture and to bind all the vegetables in the muffins together.  These simple turkey mini meatloaves are packed with veggie goodness and they have built in portion control.  Double the batch the next time you make them to individually freeze the next time you need a quick, low point meal or snack and do not have time to cook.

TURKEY MEATLOAF MUFFINS (print it!)

INGREDIENTS

  • 1.25 pounds lean ground turkey
  • 1 bell pepper, seeded and diced
  • 1 jalapeno, seeded and minced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup mushrooms, diced
  • 1 zucchini, sliced and diced
  • 1 egg white
  • 1/4 cup oat bran
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp Italian seasoning
  • 1/2 tsp thyme or sage
  • sea salt & black pepper
  • 1 tsp crushed red pepper flakes, optional

INSTRUCTIONS

1.  Preheat oven to 350 degrees.  Spray a 12 cup muffin pan with nonstick spray.

2.  Mix all ingredients thoroughly and divide into 12 meatballs.

3.  Add the turkey meatballs to the muffin pan and bake at 350 degrees for 40 minutes, until browned and cooked through.

Makes 12 Meatloaf Muffins, 1 WWFreestyle Smartpoint, 2 points+ each & 100% Simply Filling

STEP – BY – STEP

While the oven preheats, combine all the ingredients in a large mixing bowl.

IMG_3116You could use a spoon, but, honestly, your hands are the best mixers for making meatballs.  Toss gently until everything is combined, but, not compacted.

IMG_3120Divide into 12 large meatballs and place into a prepared 12 cup muffin pan.  It is easier to divide them all into 12 before you add them to the pan to make sure they are even, about a 1/2 cup per ball.

IMG_3123Bake at 350 for 40 minutes until golden and cooked through.  Remove from pan and place into a large container for easy snacking or meal additions.

IMG_3150Enjoy these straight up or serve them up top with ketchup, salsa or hot sauce.  For just 1 Smartpoint, you can definitely have at least 2 or 3 of these Turkey Meatloaf Muffins.

    I am JUST joining weight watchers next week and your site looks awesome. Will make these these weekend!! One thing I see is you eat a lot of salads.. me too.. how do you figure in salad dressings and points when the dressing has oil in it? DO you just use low fat dressings?? This will be my biggest challenge.I can give up mayo for the most part, peanut butter, and other fatty stuff but I love a good salad dressing, I don’t like a WET salad..Help! Also– I have read so much about people having problems with the NEW points..I never did the old ones.Will I lose weight??????????? 40 pounds to lose.Am exercising a lot too..THANKS for any encouragement.

      You will want to measure your dressings and fats to be certain and calculate the points accordingly. I cannot eat low fat dressings and mayo so I just eat less of the real thing. I feel more satisfied this way! Dressing points can creep up on you so you will want to measure them for sure!

      I agree with Fergie below. I usually measure my dressings via Tablespoons or I weigh them since it is easy to have more than a serving. It also helps in restaurants to order them on the side and use your fork to dip with each bite.

    Isn’t oat bran simply filling?? Hot oat bran cereal is. Just wondered because I’d pretty much call these simply filling 😉 Definitely going to make these!

    Thank you sooo much for this!! I love Tracey’s TKY Muffins (as we call them at our house). Since also moving to Simply Filling, I wasn’t sure if I was going to want to spend my WP+’s on them. Now I don’t have to! My husband said thanks too! 😉 He loves the TKY’s, though his absolute fave is the Butternut Squash Turkey Sausage Lasagne of yours. Sooo good!

      Yes, you could use bread crumbs or even oatmeal (whole or ground up) for the oat bran.

    I am new to doing SF… is this recipe completely SF? If you don’t put WPA in there you didn’t use any points?

      Yes, this is a Simply Filling Recipe. To know how to count any of my recipes and/or foods I display them as (SF) – for 100% Simply Filling Items or SF + # WPA if you need to count any portion of it towards your WPA for non-simply filling foods.
