Happy Sunday all! Last week turned out to be quite a bit busier than I thought with work lunches, dinners, late night deadlines and finding a little “me” time to chat it up with my hairdresser while getting my hair done (and working to – sad, but, true!) Luckily we have been friends forever so she was pretty understanding.
I am super excited to report two things that mattered to me this week….
- I stayed 100% Meatless and Simply Filling Vegetarian Like lol
- I managed to maintain my weight loss this week despite being a high stress week packed with several meals out.
I am definitely ready to find my balance this week by getting back in the kitchen to cook some healthy eats and getting my move on!
Since some of my eats last week cannot go unshared (they were so good!), I’ve highlighted below some of my favorite meals this week.
BREAKFAST:
“Fried” potatoes with scrambled eggs ~ 100% Simply Filling & one of my favorite meals.
Shredded Wheat with banana and a sprinkle of green lucky charms!
And this morning’s tasty Subway Egg-Wich – egg, cheese, veggies, sriracha!
(SF + 3 WPA) – so simple, but, so tasty!
LUNCHES:
I had my Slow Cooker Squash Gratin most days for lunches.
Definitely not as pretty reheated, but, just as tasty. (SF + 1 WPA)
Another day I had egg salad on top of a slice of 12 Grain Oat Bread (SF + 3 WPA)
Al week long I snacked on our veggie tray veggies with low-fat ranch (SF + 2 WPA)
I had one of the best Veggie Sandwiches ever at Ristorante Allegria for a working lunch….ready to hear about this deliciousness…..
Grilled Balsamic Portabella mushrooms with fresh mozzarella, tomatoes, arugula and pesto on grilled focaccia.
I picked mixed greens tossed in balsamic on the side (instead of fries = success!)
And I only ate half my sandwich….My mouth totally wanted more, but, I resisted since I was satisfied.
SNACKS:
Lots of random fruit ~ banana, my 5 for $5 mangos, nectarines, watermelon, berries…..
And, one night while working until midnight, I caved to the gigantic jar of red vines we have in our office. I did manage to stick to just 4 vines sipped with my coffee (like dessert, lol). (SF + 3 WPA)
DINNERS:
Celdaon has to be one of the best places I have ever eaten at in Napa Valley and I’ve only eaten my Vegetarian dishes here….I can honestly say I can’t wait to go back to try some of the other dishes they have.
One thing I love about my job…..all the events we have to drink wine at, like, these work dinners when we our entertaining people from our global offices
Since everyone was ordering appetizers, I was determined to find one I could have to….this would be the only vegetarian option and you will be shocked….it involves stinky cheese! I ate it and I liked it!
macadamia nut crusted goat cheese with port-poached figs, apples and crostini
The two appetizers I watched everyone eat and drooled over…….nope, I didn’t have a single bite!
Hello bacon egg rolls!
crispy spring rolls with soy-braised pork belly, shaved carrots, fresh herbs, kecap mani
flash fried calamari with a spicy chipotle chile and orange honey glaze, pickled ginger
This salad but so simple, but, so satisfying.
butter lettuce salad with cherry tomatoes and tarragon-champagne vinaigrette
My entrée was like the leaning tower of pisa….the polenta was crispy and creamy, while the smoky vegetables paired well with the balsamic glaze.

Dessert involved a little bit of this blood orange sorbet and a few bites of lemon meringue pie.
I could’ve eaten all of this, if only, I had room left to devour it!
I had about half this Veggie Chipotle bowl on my way to my hair appointment followed up with an iced latte as we chatted the night away.
To officially kick off Spring we fired up the grill and made Al American Flame Broiled Boca Burgers.
The secret to making Boca Burgers taste amazing is in the “sauce” and the toppers. I provided all the toppers like I do for my Simply Filling Better Than a Big Mac Burgers complete with the Secret Sauce.
Paired with a dab of Healthy Potato Salad and Foil Grilled Zucchini Packs. (SF + 3 WPA)

OMG besides the fact that I LOVED this post, and I saw a bottle of wine from Brookland Valley in one of your pics!!! We have been there many times and it’s my very favorite winery in Oz, in the part of Western Australia where Bryan is from!! We used to ship cases of their sauvignon blanc over before shipping costs got so high 🙁 Highlight for me was my son’s b’day dinner at Kimura Hibachi Saturday night with the Fam! He will be 36 tomorrow…somehow I can’t believe it! Where did those years go??? Have a wonderful week Danica!!

Wish I could say my week was as good as yours, but I have some downhill moments. In terms of the plan, that was a non-issue, I can do this in my sleep now ^_^ We had the culmination of a month’s planning for a co-worker’s retirement after 33 years in the Public Service. Then things went downhill with my cat going back to the hospital for a kidney issue relapse and I took one of the nastiest falls on the ice right outside my front door. Good news is the cat and I are both on the mend now. Bad news is this is a slow process.
As I always say: when you hit rock bottom, there’s only really one way left to go.

Loved all of your photos, got some great idea’s but have one question about the potato salad? My family isn’t really into the sweet pickles and sweet relish, can dill relish and pickles be used in the salad, or will it change the flavor and points? I had a complete blast this last weekend in Monterey , even though I didn’t lose I had lots of fun, back to doing what I need to do, and I just want you to know I read and follow you daily and you have helped me try so many things I never would have tried. Thanks and have a great day!

Wow you are so forutnate to live in Napa where you have so many wonderful, fresh choices!!! Everything in your pics looks yummy. Highlight of my week has to be saturday night out with hubby’s railiroad union buddies. Ordered smart and us wives talked allnight about crafting 🙂
