Happy Weekend all! I have to say you all surprised me on yesterday’s post ~ I really thought a few of you would time in with your old school shows (hello, Three’s Company!). Instead, you all had such nice things to say ~ thank you for all the nice comments.
I am a total breakfast person ~ it’s the one meal of the day I look forward to the most and I usually cannot wait to eat. I can usually wait to eat but only until my first cup of coffee is done. If I wait too much longer, The Husband gets pretty scared of the way my stomach growls at him lol.
I usually know exactly what I want to eat too as soon as I get up. Today it was….
Ore Ida Potatoes O’Brien that I added extra bell pepper and onion to, then “Fried” in my 2 tsp. healthy oil in a nonstick pan and sprinkled with garlic salt, black pepper and lots of smoky sweet paprika (this is what gives my potatoes their color). (SF) – 4 points+
Powered up with a little protein from a Morning Star Veggie Sausage (SF) – 2 points+
And a scrambled egg. (SF) – 2 points+ This is plated on my 8 inch salad plate because it visually makes it more satisfying to look like more. Most of my meals are eaten on our salad plates.
After breakfast we started our deep “spring” cleaning and organizing our house. One of my goals this year is to get through every room organizing it from top to bottom ~ getting rid of the old so I can make room for the new
About 1 pm, we decided to take a break and The Husband said he earned some “meat” LOL. So, I said, how about a slice and salad at Mary’s which agreed was a good compromise.
Best salad all week! I had it with real deal ranch fork dipped on the side (SF + 4 WPA) – 4 points+
um, and real deal pizza too ~ Mushroom Slice! Worth every single point (SF + 8 WPA) – 8 points+
After lunch, went to Target, the Trader Joe’s and stocked up for another week of delicious veggies eats. I also ate about half my container of organic blueberries.
Simply Filling Veggie Kabobs are so easy to make that you do not even really need a recipe. Just take a peak in your fridge, find any veggies you’d love to grill or want to use up for the week, add some tasty sauce, kabob, grill and eat!
I used the rest of my Mini Potatoes that I bought for our Potato & Black Bean Tacos earlier this week. I cut them into one inch pieces and par boiled for 12 minutes then, blanched them in a bowl of ice water.
I used the same pot to blanch 1/2 lb. of asparagus that I cut into 2 inch sticks. Boil for 2 minutes, then, move to an ice bath to stop cooking.
The “meat” on my kabobs involves potatoes and mushrooms.
Funny Fact ~ He drew the line when I told him I wanted to add brussels sprouts (he won’t touch them lol).
I also cut up half a red onion, red pepper, yellow pepper, two zucchini’s and then, sprinkled the veggies with green onions and black pepper.
Tossed in about 1/2 cup of Island Soyaki Teriyaki Sauce.
I let everything marinate while I prepared the corn and put it in foil.
Build your kabobs alternating with different veggies and colors. Pour any excess marinade on top.
Grill for 10 minutes, rotating every 3-4 minutes until the veggies are slightly browned, yet, crisp.
I had two Kabobs that are 100% Simply Filling and only 1 points+ each if your counting.
Seriously ~ you have to try this ~ it was so easy to make and there is something so fun about having a huge pile of smoky, charred, sweet veggies with meaty mushrooms and crispy grilled potatoes.
I had bought born to put on the kabobs too but I wasn’t sure how to get it cut and on the skewers without breaking them. So, we just put it in foil with a little salt and pepper, then, grilled it alongside the vegetable kabobs ~ Deliciousness!
Here are my stats for today:
- Simple Filling (SF): 12 WPA (Weekly Points Allowance) used, 0 WPA remaining
- 24 Daily Points+ 0 WPA used, 49 WPA remaining
- The Husband told me today, he is enjoying Meatless March (that’s a huge step for my Carnivore!)
- 125 pushups down, 750 to go (with a makeup 75)
- My FitBit Dashboard ~ today I’ve decided Flex is crazy ~ cleaning is way harder than 1 activity minute!
I am excited to set my clocks forward tonight since it means longer days of sunshine.

Hi,
I have a fitbit too and I’ve always been confused about activity minutes. Seems I have to walk at least 4 MPH to log any. For those of us new to your site…are you on maintenance at WW or are you still losing? I’ve lost 60 at WW with a stubborn 7 pounds to go. Hoping your recipes help me!

Hi DMC,
I was in maintenance for 5 years before I let 30 lbs creep back on 5 pounds at a time over two years. So now I’m back in listing mode with 11 lbs down so far. It’s always a journey and the closer you get to goal the more you have to move more and track more to get rid of the last stubborn few.

Now that it won’t be dark (hopefully) when I get home from work we can use the outdoor grill more…gotta try these veggie kabobs! I’ll add some sausage chunks (chicken, of course) for the meat-eating Aussie 🙂

Mary’s Pizza Shack also has this incredible Mary’s dressing which appears to be an Italian and it is delicious. How many points is it for how much of that Italian dressing as well as the wonderful Ranch. Had both yesterday and loved them both. They sold me a big pint of the Italian dressing for $6.50. I will savor all of it but want to know how many points for how much dressing. Thanks. Diane

I count the ranch as 2 points+ per tablespoon. I’d probably count the Italuan the same. Are there nutrition facts on the bottle? I’ve never looked. If not then id search Italian dressing and count it like that.

Wanting to take my 90 year old father out to lunch on Friday in Roseville and racking my brain where I could stay on points and eat – I remembered they have a small Mary’s Pizza shack – so away we went. I had the salad (you are so right about how good it is) with Blue cheese dressing (I fork dipped but only used less than half – are your 4 points for the whole thing) and got the mushroom pizza – OMG,I couldn’t believe my lunch was SO good – THANK YOU for posting this. Traveling the 80 corridor frequently to Alta, CA, we pass by – good place to know. Again Thank You.
