Skinny Sticks & This Week’s Menu

Happy Monday all!  Thanks for sharing all the DDD places you all have visited.  I think we have pretty much decided we “need” to try look for Diners, Drive-Inns and Dives locations whenever we travel.  I definitely want to try all the locations near us too.

Today was my day to get caught up on everything and I feel like I tackled everything on my list other than catching up on comments, emails, etc.  I will soon!

My day started with a big fruit bowl ~ nectarine, blueberries and a few cherries.

Plus a Morning Star Veggie Sausage (2 points+).  Did you all know that they came out with a BIG pack that includes 12 sausages?!

I am all over picking that pack up as soon as I am done with the ones I have in the freezer.

After restocking at Trader Joe’s, I was totally tempted to buy something to snack on when I remembered I didn’t need to.  I bought bananas and lite string cheese ~ the perfect 1 points+ snack to tide me over.

Lunch involved a new recipe that I made up based on craving Pad Thai and Peanut Noodles.  I knew I could make a healthier version at home so I went with it. I will be posting the recipe tomorrow.

Spicy Peanut Noodles with Grilled Chicken ~ 7 points+ per cup!

It was so fun to eat out of my new 1 cup bowl……

But, it was also kinda creapy having the eyes face me using his head as a handle LOL.

Whenever I go to the store, I always want to open up everything I buy just so I can try it.  I picked up these Sweet Potato Skinny Sticks today at my local grocery store.

They scored points with me for having an ingredient list I could recognize.

Plus, it is fun to think each stick is less than 4 calories as you crunch away.

You get 34 stick for 4 points+ which isn’t bad in my opinion since this falls into a “chip” category for me.

They are so light, crunchy and totally taste like a sweet potato churro if that is even possible.

The Husband was in charge of dinner tonight since he “marinated” the tri tip with his secret rub.  You know, if that is all it takes to have him be in charge of cooking…….. Open-mouthed smile

We started with salads topped with Trader Joe’s Spicy Peanut Vinaigrette (2 points+).

2 oz tri tip grilled to perfection…..2 points+ (he was so proud!)

All together with grilled corn.  This is the first corn all year that made me excited for summer ~ it was so sweet and crunchy. (2 points+)

Dessert ~ 4 Low-Fat Banana Bread Cookies (7 points+)

HERE IS WHAT IS ON THE MENU THIS WEEK:

  • BTLA’s, salad or fruit
  • Chicken & Kale Orecchiette (bucket pasta!) toss, salad
  • Chicken Pot Stickers & Starbuck’s (at my hair dressers) Open-mouthed smile
  • Sweet Potato Nachos
  • Grilled Thai Turkey Salad

    Danica – Have you seen the video on YouTube about cooking corn on the cob in the microwave? It’s amazing and it works! Here’s the link:

    It doesn’t have the flavor of grilled corn but it’s so easy and absolutely no work to get the cob “silk free”.

    I had corn on the cob and it was so yummy. I microwaved it for a few (so I didn’t have to waste so much propane) and then put it on the grill in foil. Grilled out yesterday and I had a low fat hot dog and Boca Burger b/c I had eaten so terrible the two days prior that I felt I needed to try to be healthy.

    The Grilled Thai Turkey Salad look sooo good. I need to try it!

    We made steaks, corn on the in the oven (just leave in the husk, oven @ 325 for about 30 minutes and husk and silk come right off), ton of grilled veggies (squash, peppers, onion, mushrooms with some garlic and olive oil) plus a ton of fresh fruit! Yummo!!!

    Hi, you always talk and show your husbands delicious tri-tip. I have never made one. Can you give us his receipe for the grill. Thanks

      HI Mary,

      Yes, I will definitely make sure I list all the details the next time we make it. He usually mixes up whatever sauces we have in the fridge and/or a mixture of spices, then, we grill it over medium heat for about 17 minutes per lb.

    Did you know that there is a IPhone app that shows all of the Diner, Drive Ins & Dives locations across the USA.. It is very cool to have handy when traveling!! It is called FlavortownUSA

    I had my steaks all ready, along with the WW chili lime corn recipe, and had to put the steaks in the freezer…rain, rain go away!! Ended up making a turkey meatbell with chipotle glaze I found in my searching…very yum…but I was really hungry for a good steak!
