Slow Cooker Pepperoncini Pulled Pork

Happy Weekend Everyone! I have found a new way to fall in love with Slow Cooker Pulled Pork by just adding a jar of pepperoncini’s.  I know it sounds crazy to use an entire jar of pepperoncini’s juice & all, but, I promise it’s delicious.  This pulled pork will melt in your mouth with a little spice, tang and sweetness without being overpowering. It can be served straight up, on tacos or nachos, on salads or in any dish you love pulled pork.

I already knew I loved this Slow Cooker Beer Infused Pulled Pork and these Slow Cooker Pork Carnitas.  I have to say though, that this Slow Cooker Pepperoncini Pork might have won my heart over all of these. I am not sure if it’s because it is such an easy recipe to make or if it’s because it’s so delicious, but, I have no doubt, this recipe will become one of your favorite ways to make pork this fall.  I picked a lean pork tenderloin roast to save on calories, then, added just a few ingredients that bring a big flavor punch.

SLOW COOKER PEPPERONCINI PORK (print it!)

INGREDIENTS:

  • 2 lb. Pork Tenderloin
  • 2-3 Tbsp. Taco Seasoning or favorite rub
  • 1 onion, diced
  • 1 bell pepper, diced
  • 16 oz jar sliced pepperoncini, including juice

INSTRUCTIONS:

  1. Spray your slow cooker with nonstick spray.  Add onion and bell pepper to the bottom of the slow cooker.  Rub pork with the taco seasoning and place on top of the onions/peppers.  Pour pepperoncini’s including the juice over the pork.  Cover and cook on low 8-10 hours.
  2. Shred pork, drain the juice (if you must!) and enjoy straight up, in tacos or as a fixin’ to your nachos.

The first night we had this, we ended up each eating the pork straight up before making our tacos – it’s that good!  The second night, we made crunchy, healthy nachos.

There are two key ingredients that give this recipe a big flavor boost.

Pepperoncini’s! I use California Grown ~ Mezzetta Mild Deli Sliced Pepper Rings.

And a little Butt Rub 😀

My mom brought us this “Butt Rub” from one of her trips, so I went with it.  This recipe also works well with Taco Seasoning (try making your own with this recipe).  I have to say I laugh every time I look up at our spice shell and see the tag line “Everything is better with a little butt rub”…it’s the little things!

    Yum! I actually make this all the time with beef as opposed to pork. However, I am definitely willing to try it out. I always like to make a sandwich and dip into the sauce like a beef dip!!

    I didn’t realize you could do pork tenderloin for so few Smarties. Definitely going to make this in the slow cooker.
