Hi all! How are you doing? I have to say I am feeling much better now that I survived May. It was fun to travel and have all types of work meetings but I feel very ready to get back into my routine. I missing feeling great because I am being good to myself. I got some much needed R&R this weekend and I feel ready to conquer June. I am actually looking forward to cooking our meals, bringing lunch, working out and hitting our walking trails.
We were up early today to head to the Alameda Antique Fair. I had my “last” Grande iced Nonfat Latte with caramel on the top today (3 sp). I am going to skip them all week until next weekend.At the fair, we split a bacon, egg and pico de gallo breakfast burrito (5 sp for my half).We made sure to stop at Jack’s Urban Eats for big salads on our way back into town.
I had the Western BBQ Steak Salad ( greens, jicama, tomato, grilled corn, garbanzo and kidney beans, carrots, fried onions, 3 oz BBQ tried tip and creamy dill dressing on the side) 8 sp and worth every single one.I made a big fruit bowl for us to share as our afternoon snack. My favorite combo is one strawberry with one banana.I had this idea that I could make this delicious zero point Chicken Tortilla Soup in the slow cooker for dinner without making the house hot cooking it. I do like the idea of Summer Slow Cooking for dinners.
Combine the chicken breast with garlic, onion, bell pepper and taco seasoning.Layered in kidney beans, chipotle fire roasted tomatoes, green chillies and fire roasted corn.Top with broth, stir, cover and cook on low all day or high for 4-6 hours.When it finishes cooking, squeeze the juice of two limes and add cilantro.
I served my bowl topped with 2 Smartpoints of crushed Fritos, a little cheese and 0% Greek yogurt. 4 sp for my entire bowl.
The verdict – I think I love it more on the stove and the winter. While it didn’t heat up the house, I still ate soup on a hot day lol.20 Daily WWFreestyle Smartpoints, 15K steps
