Today was one of those days that was so incredibly delicious that I wish it wasn’t over. Do you ever have meals and/or days like that where you are sad it’s all gone or is it just me? lol. It probably helps that I was completely spoiled today by The Husband….
He not only cooked us breakfast ~ Healthy Egg Roll Style. I totally think it’s funny that he put salt and pepper on the tortilla too. (SF + 1 WPA) – 5 points+
He also packed all my snacks and lunch for the day…..
Last night I attempted to make another Asparagus Tortilla for snacks this week.
I started off by sautéing some asparagus with a little olive oil, sea salt and black pepper.
Meanwhile, I whisked together 4 eggs and 3 egg whites and poured them over the asparagus.
I cooked one side until almost set, tilting the pan to have any excess go underneath. Then, carefully used a plate to slide it out of the pan, flipped it and finished cooking for another minute or two.
It doesn’t look as good as my Weight Watcher Leaders, but, it is still pretty darn tasty.

Spin class today was awesome ~ I totally found myself singing along to “Walk Like An Egyptian”! I did resist using the arm movements though.
Ohh and I am totally singing “ ohhh, wayyy – ooo, way – ooo, Walk Like An Egyptian” as I am typing now.
I was starving as soon as I walked back into the office….I unpacked my lunch bag that The Husband made up for me…..
LOVE!!! He is pretty funny ~ when I sent him a picture of my note saying “somebody loves me” he wrote back….Put it back in there and take it out in another week and it still applies
Homemade Salad mix with 1 Tbsp Pistachios, 2 tsp dried cranberries, tomatoes and 1 Tbsp balsamic vinaigrette (SF+ 2 WPA) – 2 points+
Served up with Tortellini Pasta Salad (SF+ 6 WPA) – 6 points+
I am so glad we are finally starting to get some delicious spring fruit. Before heading over to Costco, I snacked on a couple of organic strawberries, raspberries, 2 cuties and a hard boiled egg for staying power (SF) – 2 points+
All day long I was looking forward to dinner ~ I am not sure if it was the guacamole, the sweet potatoes or the crunchy taco shells, but, I couldn’t wait to dive into these Spicy Sweet Potato & Black Bean Tacos.
While the sweet potatoes roasted in the oven, I made a batch of Basic Black Beans. They are incredibly easy to make and taste like you have been cooking them all day versus just 15 minutes.
After boiling the potatoes for 5 minutes, I tossed the potatoes with a little Homemade Taco Seasoning and olive oil, then roasted them for about 10-15 minutes, stirring once until they were slightly crispy.
I made “his” and “hers” potatoes the same way.
Yukon Gold for him…..
Spicy Sweet Potatoes for me!
I bought the pre-cooked crunchy taco shells at Trader Joe’s and heated them in the oven for 2 minutes. The only problem with that is that it made them sort of seal together so you could not fill them with anything ~ oops.
It didn’t stop me ~ I still layered it up and made a Taco Sandwich instead.
Tortilla plus a little black beans and a little spicy sweet potatoes with my lettuce blend.
Topped with 2 big tablespoons of homemade Guacamole!
Deliciousness x’s 2! Sweet, spicy, creamy, crunchy, salty ….. I kicked it up a notch with a little Jamaican Hot Sauce. (SF + 4 WPA) – 8 points+
Did I mention he washed all the dishes too?!

I have to say my all time favorite taco aside from a Healthy Egg Roll is a chicken taco….but, sweet potato/black bean is definitely next on the list.

Next time hang the tortillas over 2 of the wires of your oven rack. They stay open and almost stand up to fill them. Look yummy as does the asparagus tortilla.

My secret for warming taco shells is to place a ball of aluminum foil in each one so they can’t close. I reuse the balls I guess forever :). Love your blog and I haven’t had a recipe fail yet!

This is simply the breakdown of my day as tracking according to the Simply Filling Technique. I provide examples of how I track for both methods for all those following the program. 13 WPA would be the amount of Weekly Points Allowance (WPA) I used for the non-simply filling foods while 8 points+ would be how many points you’d count if your method of tracking is counting points+.
