Happy Wednesday all! Thanks for all the nice comments/suggestions on my last post for things The Husband can and for all the ideas for how to freeze herbs. I am definitely going to give all of the above a try.
This morning’s pre-workout/train ride snack ~ a banana and coconut coffee.
When I got in, I hopped on the treadmill for a pretty good C25K jog/walk. I played a few “Treadmill Games” each time I wanted to stop….changing the speed up every 30 seconds so that I focused on the seconds to the next level, not how far the distance was that I needed to go.
I couldn’t wait to dig into breakfast post workout!
3 more Blueberry Kodiak Cakes with 1 tsp Whipped Butter and 1 Tbsp Maple Syrup (7 points+)
Morning Star Veggie Sausage drizzled in the maple syrup (2 points+) I am so hooked on this combination ~ It totally hits the spot ~ salty, sweet, doughy, buttery ~ GOOD!
It didn’t quite hold me over as long as yesterday, but, I think it’s more because I knew I had a big container of watermelon, cantaloupe and pineapple waiting for me.
Plus a Mini Babybel Cheese (1 points+)
Lunch involved my favorite salad…..it’s sweet, crunchy, peanutty, good.
* Organic Mixed Greens plus carrots & a few cherry tomatoes
* 1 Tbsp each ~ dry roasted walnuts & dried cranberries (2 points+)
* 1 Tbsp Trader Joe’s LF Spicy Peanut Vinaigrette (1 points+)
I doubled the egg salad that I made up for The Husband this morning and made up a sandwich that I think I NEED to repeat again too lol!
* 2 slices Trader Joe’s FF Multi-Grain Bread (3 points+)
* 1 Hardboiled egg plus 1 hard boiled egg white (2 points+)
* 1 Tbsp RF Mayo & 1 tsp mustard (1 points+)
* Sea Salt and Black Pepper to taste
Since The Husband still isn’t eating too many things, I decided to go with what I knew he would eat ~ Annie’s Mac n Cheese!
Ok ~ well, it’s Annie’s Mac but with the Arthur Shaped Pasta….(7 points+)
It has been nice to have leftovers since I have sort of been on a I don’t feel like cooking mood lately (notice? lol).
I will get back in the kitchen cooking soon ~ once I have a chance to breath and get caught up. There is just too much going on lately and not enough me.
I think I am pretty much over the ribs now. I took a picture of it whole, then, cut off 1 oz to eat (2 points+)
I am pretty sure I will have eaten an entire watermelon all by myself by the time the week is over….I honestly think it’s my favorite summer fruit!

What is your favorite summer fruit?
I think by the time summer rolls around, I am glad to have ANY fruit other than apples, pears and oranges. However, it really depends on what just tastes really good each summer. I find it varies ~ THIS SUMMER ITS WATERMELON, but, I also have 10 different types of fruit in our fridge at the moment LOL.

Hmm I may just have to go buy some Annie’s mac! It looks delicious and I love the shapes! I’ve been in a none cooking funk as well, but mac and cheese sounds doable. ^_^
My favorite summer fruits are plums, peaches, nectarines, and pineapple! I’m really not a huge watermelon fan because it tends to get mushy on me before I can eat all of it!
Hope the husband is on the mend!

Watermelon in the BEST summer fruit. Hands down.

All the summer freshed picked berries: strawberries, blackberries, raspberries and blueberries. But have to admit your water melon always looks good. Any good recipes for low cal slushes when its REAL hot. Keep Kool!

Still waiting here for the really good summer peaches. In the meantime, the watermelon has been fantastic . . . practically finished off half of a large seedless one all by myself! So nice to just go to the fridge for a sweet juicy fruit treat!

I just had to see the word Fruit and my mouth started watering. I’m in Vegas now and I havent had any fruit( except a banana). I love stone fruits and berries and melon and cherries. Summer fruit is awesome, especially in California. I cant wait to get back and go to the Farmer’s Market on Sunday.

I am loving all the summer fruit – but its kind of a love/hate relationship – I love it, but I have to take insulin to eat it – but shooting myself up is worth watermelon!

How do you heat up your Morning Star sausage patties? I love the links! Have you tried them? I wrap them in a paper towel and microwave for about a minute. My old microwave was a minute, this new one is 44 seconds. It has two temperatures, off and nuked to death.

Strawberries!! I about eat a container a day by myself at one meal. My brother can eat a whole watermelon!! Oh, and once he ate a whole pineapple, which hurt his stomach from all the acid. Fruit= happy tummies. 🙂
