Happy Wednesday all! Today was such a fantastic food day. I love when my boss comes into town as we get spoiled with alot of delicious food. At the same time, it really makes me focus on picking the healthiest items and eating only what is “worth it” to keep my points in check.
We had a breakfast meeting at Cafe Bernardo and it was so good.
I had the scrambled eggs with chives and chicken apple sausage and a slice of toast – it looked too good to pass up. I also managed to have only one bite of potatoes leaving the rest. (8 sp).Plus this creamy cappuccino (2 sp).We had salads at Jack’s Urban Eats for lunch and I focused on zero point add-in’s. I did have a few of the community Urban fries too (3 sp).
Here is what is in my 4 Smartpoint bowl:
- Mixed greens
- Chickpea/kidney beans
- Chicken breast
- Balsamic dressing
I balanced out my day with this 20 Minute Creamy Marsala Mushroom Pierogi Skillet.
Mushroom, onions, garlic….Plus Marsala wine and cheesy potato pierogis.If you want the recipe, let me know and I’ll post it.
