Happy Wednesday all! I told The Husband I am so excited that the week is a little more than half over…just two days until the weekend. He said, yep, it’s 60% over… somehow, to me, that doesn’t sound as exciting as being half over lol.
Breakfast was a Healthy Eggroll (Mission Extra Thin corn tortilla fried in non-stick spray, toopto with a melted slice of Sarcento RF cheddar, a “fried” egg and Sriracha) – 3 SP, berries.And, only 1 cup of coffee – no Starbucks, passing go or collecting $200.
We headed out again today for big salads at Dos Coyotes. This is one of my all time healthy Mex places.
It could be the zero point salsa bar with a ton of options…I put these all over my salad too.But, it might also be this Yucatan Chicken Salad. I eat everything but the tortilla and it comes packed with so many zero point items. I still count 10 sp for good measure.
Charbroiled chicken breast on green leaf lettuce, black beans, red onion, carrot, sweet peppers, cabbage and corn in Southwest vinaigrette served on a flour tortilla with mango fruit salsa and chipotle cream.Tonight’s dinner was picked out by The Husband and it’s one beef dish I actually love. It’s probably because it’s packed with mushrooms, caramelized onions and cheese.
