17 Bean Vegetable Ham Soup Recipe

Happy Monday all! I definitely think today was an AWESOME start on Day 1 of the new Weight Watcher’s Points Plus Program.  I LOVE that I wasn’t starving all day, enjoy my food and I have POINTS left for a treat tonight!

In the morning I NEED protein or I am hungry like an hour later.   So, I figured I’d whip up my usual “EggWich”.

Oatmeal Bread

2 slices Nature’s Pride Oatmeal Bread

1 Egg “fried” with nonstick spray sea salt & black pepper

I learned a lesson on BREAD today with the new Weight Watcher’s Points Plus Program.  Normally bread on the old points program  1-2 points a slice and 3-4 points for 2 slices.

POINTSPLUS = 1 slice for 2 pts or 2 slices for 5 Points!

No worries though, my ZERO POINT apple made up for my 7 point+ sandwich Smile

My breakfast kept me going for 5 hours, no AM snack needed.  That, my friends, is why I LOVE protein in the morning.

Lunch today was some leftover 17 Bean Soup I whipped up with our Christmas Dinner on Thanksgiving Leftovers.

Check out the 17 bean goodness ~ I really just LOVED the colors.

Simplest soup ever ~ simply, chop, drop and pour.

17 Bean Vegetable & Ham Soup

INGREDIENTS

16 oz Dried Soup Beans

1 cup chopped onion

1 cup chopped celery

1 cup chopped carrots

2 cloves garlic, minced

1 can fire roasted diced tomatoes with green chiles

1 ham bone or hamhock

32 oz chicken broth

32 oz water

2 cups chopped and cooked lean ham

INSTRUCTIONS

1.  Soak your beans overnight according to the package instructions.  Drain and rinse.

2.  Combine everything, except the ham in a large stock pot.  Bring to a boil, reduce and simmer 1 hour or until beans are soft.  Add in ham and simmer 5 minutes until ham is heat through.

Makes 10 heaping cups,  5 points+ each

I think leftover soup is even better the next day!

I had that ZERO POINT orange for dessert!  I <3 points plus just for the FREE FRUIT!

I was wanting to eat my BANANA all day long now that it’s ZERO points, but, I managed to refrain until the afternoon.  Paired with a 2 pts+ Sargento Colby Jack Cheese.

My focus through the New Year is to work on using what we have on hand and getting creative.  I have our freezers packed lol.

Two types of Potatoes tossed in a little olive oil, sea salt and black pepper.

Sweet PotatoesFingerling Potatoes

His & Her Potatoes! The Husband won’t touch sweet potatoes. Baked at 400 for 15 minutes, then, I added the chicken in the “secret sauce” on top and cooked for 35 minutes longer.

Secret Sauce

Garlic Chipotle Sauce

2 Chipotles in Adobo Sauce

2 Tbsps Trader Joe’s Raw Honey

2 tsp cider vinegar

2 cloves garlic

1 tsp cumin

Whirled in my mini processor then tossed with 4 chicken breasts.

Chipotle Glazed Chicken with Sweet Potatoes

3 ounces Chipotle Glazed Chicken Breast (3 pts+) ~ sweet, spicy, GOOD!  I LOVED hearing The Husband go “hot, hot, hot” LOL Open-mouthed smile

Honey Chipotle Roasted Chicken

3 oz roasted sweet potatoes (4 pts+, added 1 for the Olive Oil) These potatoes totally pair well with the chicken and cool your mouth off.

Grilled Asparagus (0 points+)

Believe it or not, I still have lots of points left!!!  I am off to find a way to use them up Smile  I am really thinking about an apple with my Biscoff Cookie Spread and a cup of milk!

I am so humbled by all of your comments, stories and the fact that you all want to be in a support group together.  It is already SO MOTIVATIONAL to me to read your comments.  I cannot wait to at least get something up and running for us all to share ideas.

I am working on in it my “spare” time, but, I promise, something will be up soon!

    haha did you drop it on the concrete?! i have done that a few times 🙂 when they get back in stock i will send jay one. i felt bad that i didn’t get to get him one!

    love the recipe. and of course i love trader joes. i brought home some of the cranberry sauce so i can make your scones.. wahoo!!!!!!!!!!!!!!

    I had many ole fashioned favorites this year at Thanksgiving..some were healthy some were not…I loved absolutely LOVED my mom’s apple-cranberry sauce i bet i will take awhile to figure out how many points that was..
    she used 1 cup of sugar MAX for many jars of sauce and lots of craberry and so many apples yum..i also loved the stuffing meat one, i bet that one would have been regularly 4 pts for 1/2 cup..NOW it would probably have been 3 pts more.
    AND my favorite treat of the night was brownie..but Better than that was this new desert ahh i don’t want to torture you girls..i had an average slice of Pumpkin cheesecake wow!!!

    But that will be much more rare occurence now.
    I really want to succeed at this plan..one of the reasons i did not last time was all the tempting foods that i was eating at my stepfather’s house i lived there..NOW i have my own place so i can make more stuff 🙂
    i have my own omelette maker..that would work :))
    quick question to the blogger..
    How many points do you think an omelette could be on a new plan’??
    My fave omelette is with 2-3 eggs, mushrooms, a little bit of cheese, and 1/5 or 1/6 of an avacado.
    But i can definitely eat 1 egg and 2-3 egg whites and all the rest the same..
    I know back on the old plan my concotion used to be with regular eggs around 8-9 points or even 10..with egg whites it was sweet only 5 pts.
    But now it is probably so much more 🙁

    But that’s Ok i can still do this!
    I am also so glad we still have our Aps and the 49 weeklies!
    Well enough rambling for now new friends 🙂

    Sorry that i can’t answer the 1st question…i will have my answer at the meeting either Tomorrow or Wednesday 🙂

    I’ve seen you mentioned several times on some of my favorite blogs–a la Elise and Janetha–but haven’t looked at your site until I saw you mentioned in an article on the new WW plan that popped up on my Yahoo page. As soon as I saw “Danica” referenced, I was 99% sure it had to be you! I’m definitely adding you to my Google Reader…keep up the good work! 🙂

    My most favorite thing I ate at Thanksgiving was Allie’s (Live Laugh Eat) goat cheese stuffed pears! So good!

    I feel like with this program, using all my daily points will be a struggle! I had left over sweet potato pie since I had like 11 points left after dinner. But this is a huge change from pre PointsPlus when I had to dip into my flex often. I guess we’ll see what happens in the long run, but I definitely won’t feel hungry on this plan!

    try weight watchers bread – multi grain bread and wheat bread – two slices 2 points and a power food!!!

    I also feel like I had a great first day. I felt a little woozy even though I’d had 8 points before lunch but I think that was from drinking a LOT of water. I had a steak salad for lunch (10 pts), and I was surprised that I wasn’t more full afterwards. I think my body needs time to adjust to less fat. I did two workouts (elliptical and aquarobics) and was down 1.3 this morning, so if this keeps up I can lose 20 lbs in no time.

    Already the challenges: a friend is making me lunch today, and I’m meeting girls for dinner. I downloaded the IPhone app so I can look things up. Good time for the weekly points if necessary!

    So fun to see you quoted on Yahoo! That soup looks amazing! I’ll make a Trader Joe’s run this week but now I’m off to buy a new food scale (since I broke mine over a year ago).

    My first day on the new program was ok. It’s going to be a huge change for my mind, but I know I can handle it. I think it’s a great change, just one that I need to learn.

    It’s like I said earlier today, it’s like I’m in a different country and I have no idea what the exchange rate is on anything yet. In time i’ll learn it and how it works.

    Love the soup recipe, I always buy it at the store and then randomize the ingredients, but yours looks fabulous!

    I started Sunday. Sunday went good. I felt like I over ate on Monday even though I was within my points. Today seemed to go a little better.

    My favorite thing I ate during Thanksgiving was some sage stuffing I made.

    I am with you on the protein thing for breakfast. If I don’t eat protein for breakfast I feel sick and hungry all day!
