Happy Hump Day all!! Today was just an AWESOME day all around ~ I got in a great workout and it was 85 degrees of sunshine. I also had a pretty delicious day that included remembering one of my FAVORITE yogurt mix-ins and creating one of the easiest dinners I’ve ever made.
This morning started off a little like yesterday with a hard boiled egg & banana (2 Points+).
I really wasn’t feeling my C25K run/walk this morning, but, I hopped on the treadmill and got to it. It’s funny because on the days I want to workout the LEAST, I PUSH myself the MOST!
I did 90 second jogging/walking intervals and I increased the speed every 30 seconds my entire workout – pushing faster each time for 30 minutes.
I honestly couldn’t wait to dig into my mid-morning snack because it involved this Lemon Curd from Trader Joe’s. I LOVE it and haven’t bought it forever.
1 Tbsp is 3 points+ but a little goes a long way so you usually only need 1-2 tsp.
I actually pondered my usual toss in the jar of curd with my container of greek yogurt but I really didn’t want to have to carry both things back on the train.
So, I made an “Egg Creation” ~ 1 Tbsp of Lemon Curd with 1 cup TJ’s 0% Greek Yogurt.
Swirled together with 2 Low-Fat Banana Bread Cookie (10 points+). I definitely think I could use 1-2 teaspoons next time and I am totally crumbling cinnamon graham crackers on my snack tomorrow.
This was AMAZING…..I actually pondered licking the bowl until my boss stopped by. I thought that might be hard to explain
Lunch today had to be FAST because we had a meeting with our new personal trainers! They are going to take us through a series of workshops first before we do our 1 on 1 sessions…..I can’t wait to learn from them.
I chose another Weight Watcher FRESH MEAL ~ Three Cheese Macaroni
Pretty decent ingredient list….they really are getting better.

It’s super creamy with a lot of sauce ~ it’s like a grown up version of mac and cheese without the topping. I know I am a mac n cheese snob (not just because I work for Annie’s LOL) but this wasn’t bad when topped with a little heat, sea salt and black pepper.
Protein Power ~ 2 Points+ Ginger, Pear and Turkey Sausage Patty.
All rounded out with a HUGE Organic Mixed Greens Salad topped with 2 Tbsp Trader Joe’s LF Spicy Peanut Vinaigrette (2 points+.) I LOVE Mixed Greens but sometimes I honestly feel like I am eating grass when I eat them
Tonight’s dinner was completely inspired by TJ of TJ’s Test Kitchen. A few weeks back TJ gave me these AWESOME crunchy Corn Tostadas Shells that she picked up at the Orowheat Store.
THREE for 3 points+!
I took her advice and used them to make up some tasty Turkey and Bean Tostadas that were so good I cannot wait to have them tomorrow! It was so easy to make and took less than 30 minutes from start to finish.
TASTY TURKEY & BEAN TOSTADAS
INGREDIENTS
- 1 lb Lean Ground Turkey
- 3 Tbsp Taco Seasoning (I make my own – it’s easy and better than any package!)
- 15 oz Kidney Beans, drained and rinsed
- 15 oz Fire Roasted Tomatoes with Diced Chilis (from Trader Joe’s)
- 1/2 cup Salsa (I used Trader Joe’s Salsa Fresca)
- 1 cup fire roasted or regular corn
- Pre-Cooked Corn Tostada Shells
- TOPPINGS ~ Pick and Choose any of your favorite things: Low-Fat Cheddar Cheese, lettuce, sweet peppers, jalapenos, tomatoes, AVOCADOS, sour cream, etc.
INSTRUCTIONS
1. Heat a large skillet over medium heat and add ground turkey. Cook turkey until browned, breaking it into pieces as it cooks, about 8-10 minutes. Sprinkle with taco seasoning and cook 1 minute. Meanwhile, prep all your toppings.
2. Stir in beans, diced tomatoes and salsa. Cook for 5 minutes or until majority of the sauce evaporates.
3. Layer it up and “Crunch Away”!
Turkey & Bean Mixture ~ Makes twenty-four, 1/4 cups servings, 1 points+ each

STEP-BY-STEP
Brown the ground turkey. Add taco seasoning, beans and diced tomatoes.
Salsa ~ that’s the GREEN ~ looks ugly, but, tastes awesome!
The “Secret Ingredient” Fire Roasted Corn ~ The Husband even gave the OK to use it

While the meat cooked, I prepped the toppings.
You do not have to do anything with these tortillas but I heated them at 325 for 4 minutes to make them warm, toasty and to make the “corni-ness” pop out.
LAYER IT UP! I used my 1/4 cup measuring cup to scoop out 1 portion on each shell.
Then, topped each 1/2 with 1/2 Tbsp Finely Shredded LF Sharp Cheddar.
Organic Mixed Greens and another sprinkle of cheese, about 1/2 tsp per side.
Tomatoes, mini sweet peppers, jalapeno and AVOCADO!
I started off with TWO tostadas and then assessed if I was still hungry or if my mouth wanted more. After about 5 minutes, I went back for another for both reasons
I LOVE these shells ~ they stay crunchy and taste like you are having really good corn tortilla chips.
Here is the points+ breakdown for all 3 Tostadas:

* 3/4 cup Turkey & Bean Taco Mix, 3 points+

Speaking of Tortillas ~ What is your favorite brand of tortilla? Are you a corn or flour girl?
I LOVE Guerrero and Mission Tortillas the best ~ Corn all the way. I am not much of a fan of the lower points+ versions although at times I do convince myself to eat them. I have to say these crunchy tostada shells are going on my always have on hand list.

Can’t wait to see everyone’s favorite tortilla suggestions since I’m on the hunt for a new brand…I’ve been going with the low point La Tortilla brand, but I’m not so sure these are my favorite.Gotta make those turkey burgers this week-end, and buy some of the new WW entrees; I’m also into the Miracle Noodles! Oh my, mix half a bag with your WW pasta entree and you have a HUGE serving that fills you up! These noodles are MUCH different than the shirataki tofu noodles that Hungry Girl loves, (and I HATE) but they are interchangeable.
I love tostadas! I’ve been eating them often. Love that they are low points and FILLING!
Flour tortillas are my favorite!

I use La Tortilla and also the ones from Trader Joe’s that say SONOMA across the front. Those to me do not have that after taste…ya know what I mean? lol I also like the Mission EXTRA-THIN corn tortillas. I always have a pack on hand for making baked chips. 🙂

Totally a FLOUR tortilla girl! The BEST flour tortilla I have ever had is Micaela’s!!! They are so good! They are made fresh in Woodland, CA and delivered to nugget markets! The best part is that they have a reduced fat one that tastes just like the original. Both are good but reduced fat is less points plus. One tortilla is 4 pts + but totally worth every bite!
I love all tortillas! I don’t discriminate! haha.

I am with you…I love Guerrero tortillas. Luckly I live near a place where we can get cheap delicious fresh homemade tortillas.

I doubt they will discontinue the Frozen Smart Ones…I think they are just trying to expand into the Fresh/Refrigerated section at the market. This is just my opinion of course since I do not work for them.
