Hi all! I took some much needed down time this weekend to relax, reset and refocus after a very long, but fun, week. While last week was not really a stellar week for me on the food and workout front, I learned a lot about myself so I can make adjustments next time.
I decided to set the tone for the week by getting back to nature a bit and checking off my first workout of the week with a vineyard hike.
The yellow mustard flowers are so beautiful right now. Before heading out, I whipped up a zero point breakfast for The Husband and I.
2 scrambled eggs with 1/2 a mango and a sprinkle of blueberries.We also picked up Tall Nonfat Cappuccinos with caramel on top for the drive. (2 sp)
Truth be told, I bribed The Husband with Gott’s for lunch if he went with me.
I had the Vietnamese salad with grilled chicken…spicy, sweet, peanutty with a fresh herb and lime dressing.
“Romaine lettuce, kale & shredded cabbage tossed with cucumbers, carrots, mung bean sprouts, cilantro, mint & peanut lime vinaigrette & topped with grilled chicken breast, pickled red Fresno chiles & green onions.” (4 sp for the dressing)This totally hit the spot in a way that I did not miss fries, onion rings or burgers.
4 hours later I snacked on a banana, Jarlsberg Mini Swiss (2 sp) and 1 Tbsp pistachios (1 sp).The Husband requested my Lazy Enchilada Casserole for dinner tonight. I forgot how delicious and easy this recipe is to make.I boiled 1 lb chicken breast in a little salted water for for 20 minutes. Shredded it, sprinkled with a little homemade taco seasoning, red onion and enchilada sauce.Then, I built my casserole. 1/2 cup sauce, 1/3 of my corn tortillas, 1/2 the chicken mix and 1/3 of the cheese. I didn’t have olives so I skipped that.Repeat, then finish with tortillas, sauce, cheese.
Bake at 400 for 25-30 minutes.Slice this cheesy, chicken goodness into 8 squares for 7 WWFreestyle Smartpoints each.I served my plate up with a dollop of 0% Greek yogurt, cilantro, fat free green chili refried beans (they are zero points) and 1/4 of the Taylor’s BBQ ranch salad mix (4 sp).I feel really good hitting the reset button and motivated to make this week a good one.
My menu is pretty much the same as last week as I did not cook dinner at all last week.
