Happy Monday all! It was so fun to read all the things you all are going to do this week to be healthy and it was also really cool that some of us have the same goals! I am so proud of me for starting my day and week off by sticking with goal #1.
Getting up at 5 AM and hopping on the treadmill for a 30 minute walk run! It felt great and helped me get closer to goal #2 by drinking 32 oz of water before breakfast….double success!
Post workout I powered up with one delicious 2 points+ Simply Filling breakfast eaten on the train.
Banana ~ berries!
Plus, a perfectly hard boiled egg for staying power.
Lunch today was something I have been eyeing at the Café.
Grilled Teriyaki Pineapple Sandwich with Shaved Jicama, tomato, lettuce and pepper jack cheese….I ordered mine on top of a Thin Bun to save on points+. (9 points+)
If you skipped the cheese, this would’ve been a Simply Filling Sandwich plus 1 WPA.
Instead of fries they made me an Asian side salad (2 points+) ~ you would count WPA for the dressing and sunflower seeds on Simply Filling.
All served up with a giant pickle.
I had 2 mini’s for dessert ~ I earned them today (2 points+)
I knew I was stopping at the store on the way home so I made sure I ate my train snacks.
Watermelon & a 1 points+ String Cheese (if the cheese was FF it would be a 100% Simply Filling Snack).
When I walked in the door, The Husband couldn’t wait to give me his Dating Anniversary Card since today is officially “Our 8th Birthday” LOL.
In totally random events…he came across this check number in his series 2416 as he was paying his bills and wrote it out just for me ~ so crazy, but, so cool at the same time!
Dinner tonight took minutes to make and it was so light, healthy & flavorful. We made up this Cooking Light Recipe for Avocado Chicken Salad.
All you do is take 2 cups of chopped chicken (I used rotisserie), 1 chopped avocado and 1 cup pico de gallo with hot sauce or salsa.
Then, drizzle with lime juice (I doubled it), olive oil, sea salt and black pepper.
Toss ~ I added dashes of hot sauce for extra heat.
Scoop ~ a serving is 1 cup!!!
Add cilantro, then, take it out because The Husband said it looked dorky
Served with 24 crunchy homemade tortilla chips that are topped with sea salt and drizzled with a little lime juice.
Crunch away ~ my ENTIRE plate was 9 points+ and completely light, healthy and refreshing. The Husband LOVED It and proceeded to eat the other 3 servings LOL.
Simply Filling would count WPA towards the chips & avocado (6 WPA).
STATS so far today on my BM from Midnight until 8 PM:
- Calories Burned: 2,734 (Activity points earned: 3)
- Calories consumed: 25 WPA (I still have to add my food to track my calories in)
- Steps Taken: 14,799
- Sleep Efficiency last night: 91%, hours slept 7 hrs, 5 mins
If you followed my day using Simply Filling, you would’ve eaten everything here, checked off all your good health guidelines and used 10 WPA. I highlighted the WPA because then you can pick and choose what is worth it to use and what you’d save on (like the sunflower seeds or chocolate).

I actually make the chips ~ they are so easy to do. I buy the Mission Extra Thin Yellow Corn Tortillas. When you spray them in nonstick spray, sprinkle with sea salt and bake at 400 for 6-7 minutes they are BETTER than any chip you can buy (almost better than at the restaurant!)
Plus, you get 24 chips vs 10-12 (double!) for only 4 points+

I am not even sure how it is holding me over for 4 hours but it is. This week I was testing out protein plus fiber (fruit) to see the staying power and it is working. I really think the secret is the hard boiled egg.
I missed BACON and BBQ chicken when I did the vegetarian/vegan thing 🙂

The 2,734 calories is the total number of calories I burned from 12 am – 8 pm and included my 30 minute workout. I calculated my activity points for my actual 30 minute workout, not the whole days calorie burn.
Does that make sense?

Hit send too soon, sometimes I’ll even make “dessert” chips for the kids and spray the chips with spray I Can’t Believe It’s not Butter and sprinkle with cinnamon and sugar. SO good!
OH YUM!!! I NEED to try Dessert Chips ~ like Churros…I never even thought of using tortillas for that. I’ve used won tons but tortillas….YUM!

They are so good! We used to go to a mexican restaurant every week when we lived in california and they brought them out at the end of the meal. I re-created them a few years ago for my kids and it’s one of their favorite desserts now!
