Hi all! How was your weekend? My weekend was fantastic. I started off Saturday with a 4.2 lb weight loss at weigh in which totally validated my back on track week. We spent Saturday doing a bit of shopping, reading, relaxing and getting prepped for the busy week ahead.
Today we were up early to head to the Alameda Antique Faire. We grabbed Starbucks for the drive.
Tall nonfat cappuccino with caramel on top (2 sp) no red cup šAt the fair, we split a bacon, egg, pico de gallo & salsa burrito (4 sp).
I got my salad fix plus 5 a day at Jackās Urban Eats for lunch.
Here is what is in my huge BYO salad:
- Mixed greens
- Chicken
- Chickpeas/kidney beans
- Apples
- Roasted artichoke hearts
- Roasted mushrooms
- Olives
- Cucumber
- Balsamic vinaigrette on the side
This salad came in at 3 WWFreestyle Smartpoints using half the dressing.I couldn’t resist having a few of his Urban Fries (they are topped with blue cheese that tastes like ranch, chili oil, chili flakes and parsley). I counted 7 Smartpoints for my taste.
I spent the afternoon doing a bit of meal prep.
I peeled our last 4 pomegranates.And whipped up this Tortilla, Pepper and Egg Casserole for breakfasts.
I am in training all week where lunch is provided and I have no idea what it will be. I plan on bringing fruit, nuts and these as healthy options to snack on or supplement.
This weekend I scored all of this at the Annual Meyer Clearance sale for $60! I am totally in love with the mini loaf pan but I think I am just as excited about my green garbage bowl. I’ve always wanted one but refused to pay $20-$30. I got this one for $7. They threw in the two spatulas for free.
Another strategy I have for this week is to cook meals that make leftovers so it cuts down on cooking time. Ā Iāve been craving Bubble Up Pizza Casserole and Chicken Pot Pie lately so tonight I decided to experiment combining both ideas.
Bubble Up Chicken Pot Pie Casserole….creamy chicken with hearty veggies, fresh thyme with little chewy dough balls on the bottom and crispy Parmesan dough balls on top. Total comfort food!Wow – this turned out so much better than I thought. The points come in at 10 Smartpoints a serving but that is mainly because I like using Trader Joeās Giant Refrigerated Biscuits (they are 7 sp each). Itās the ingredient list on the other brand I am not a fan of. You can save on points using regular size versus grand biscuits.
