While it’s always great to have something homemade, sometimes, you just don’t have the time, energy or desire to whip it up. I like having the occasional box mix ready for nights like tonight!
Good Earth Dinner Kits are 100% whole grain, no trans fat, no artificial flavors, no artificial preservatives, no MSG – just add meat and, voila! Dinner is served.
The kits come in four delectable meals:
* Mediterranean Chicken with angel hair pasta
* Spicy Citrus Glazed Shrimp with angel hair pasta
* Herb Crusted Chicken with mushroom risotto
* Tuscan Chicken with penne pasta.
Tonight we tried the Good Earth Mediterranean Chicken Kit!
6 points a serving is awesome!
I LOVE that they are using ingredients I can recognize!
Simple instructions ~ It took us 30 minutes start to finish – not too shabby.
Start off by adding a little Olive Oil to your pasta water and bring it to a boil.
Meanwhile, slice your chicken breast and coat it with their pre-seasoned flour.
“Fry” your breaded chicken in Olive Oil until lightly browned on both sides.
Whip up your secret sauces and spices.
Pour the creamy herb olive oil sauce over the chicken.
Simmer for 8 minutes or until your chicken is cooked through.
Drain your pasta and put it in a big bowl.
Cover with your creamy chicken mixture and Viola ~ dinner is done!
Overall, we thought the flavor was decent for a boxed meal, but, you have to LOVE herbs to really enjoy it. The sauce does thicken as it sits and I bet this will be even better tomorrow as leftovers.
