Today has been such a non-stop go kind of day, but, in a good way. It meant that my work day flew by so I could get on with our fun evening we had planned. I knew exactly what I wanted for breakfast when I woke up ~ a WAFFLEWICH!!!!
What starts out as a two simple waffles, a little almond butter, a dab of apricot preservers and banana……..
Turns into this ~ My beloved Wafflewich! I’ve missed my wafflewiches so much – how could I have gone so long without one?! LOL.
In the mix:
2 Trader Joe’s Whole Grain Blueberry Waffles
1 Tbsp Crunchy Almond Butter
1 Tbsp Organic Apricot Preserves
1 banana, sliced
I couldn’t fit all the slices in my wafflewich so I put them on the side.
I was able to score the BIG LEMON coffee mug today and filled it with 2/3 Starbuck’s Decaf and 1/3 hot water. This was an AMAZING breakfast and it kept me going for almost 6 hours.
After a crazy busy morning at work, I needed to get out for a bit. I knew The Husband wanted to grab a quick dinner on the go tonight. So, I figured why not make up a quick salad at Whole Foods to have for me and he can get his junk food fix on. It was super hard to resist making up two salads, but, I was really looking forward to the salad I had planned.
I made up a Spicy Sweet Potato and Black Bean salad
With toppers ~ crunchy blue corn taco shell, homemade Salsa and AVOCADO. It completely hit the spot.
I wanted something sweet for dessert so I started out with some Annie’s Organic Sunny Citrus Bunnies. But, I think a piece of Dark Chocolate with Almonds that my co-worker offered up may have showed up too. I actually ate it before I even thought about taking a picture ~ whoops.
Tonight we had plans to head out to a local casino since they were having an August Birthday promotion. The Husband had 10 chances to win $1,000 and he said he was feeling super lucky. So, off we went and I totally LOVED that we got to ride in the car pool lane since there was traffic. Yeah!
On the drive, I broke out my Whole Foods salad. I am not sure I remember everything that is in here, so I’ll just show a few highlights. I never get dressing at Whole Foods because they have those Cioppino Onions (marinated in honey and balsamic) and they flavor the whole salad. I think it’s one of my favorite things about their salad bar.
* Romaine
* Organic Mixed Greens
* Green Cabbage
* Red & Yellow Bell Peppers
* Peas, Corn, Edamame
* Cherry Tomatoes
* A couple spicy croutons
* A sprinkle of raw sunflower seeds
And a few additional fun things from their cold bar.
Shanghai Spicy Peanut Noodle Salad ~ Delish!
Roasted Veggies.
An egg for protein.
Pico De Gallo ~ more dressing fun.
The Husband stopped at Taco Bell with him but I had to share my salad too LOL. Next time, I’ll make a bigger one for both of us – maybe I can get him away from fast food?!
He didn’t win the $1,000, but, we had a total blast which is really all that matters.
I know I am going to be dragging tomorrow, but, it was worth it and I am so glad it’s Friday!
