Happy Monday all! Do you ever have a day that you wake up with the determination to make it an awesome day and then one smart choice leads to another making it one successful day?? That was me today and I had one awesome day.
Even though today started like a Monday, I was late, racing around the house unable to find an outfit I liked (so many outfits tossed aside), I still make up a healthy breakfast for my drive.
2 scrambled eggs with one Trader Joe’s hash brown patty fried in 1 tsp avocado oil (5 sp).Breakfast kept me full all morning and powered me through my lunch time workout. 5 hours.
I finally got back on the treadmill for C25K week 1.1 picking the Rainbow Unicorn as my trainer on the C25K app.
I came back to one super delicious made up lunch.
Salad topped with 1/2 cup leftover turkey taco meat and 1 cup of my 1 point Confetti Bean Salad. My entire bowl was only 4 Smartpoints and so satisfying.I had a bunch of watermelon for dessert.Ready for this – all of that kept me full for 8 hours. Although I was pretty hungry when I walked in the door.
I picked this Weight Watchers Chipotle Like Shrimp & Corn salad for a fast dinner.
I seasoned the shrimp with salt & pepper then fried it over medium high heat for 3 minutes. I added 1 Tbsp chipotle in adobo, cooked one minute longer then set it aside.In the same pan, I added fresh corn, peppers, tomatoes, a little sea salt and black pepper. Cook for 3-4 minutes and remove from heat.Add an entire avocado, juice and zest of one like, 1/2 cup chopped cilantro and 1 tsp chipotle in adobo for an extra smokey kick. Toss and serve – makes 4 servings for 3 WWFreestyle SmartPoints each.I love the flavors – it’s a little smokey, spicy, sweet and tangy. While it’s fun getting avocado bites, I think I’d cook the shrimp then toss the rest raw as warm avocado is kinda weird.
