Happy Tuesday all! I think that one of the hardest parts about coming back from vacation is getting into the “groove” of things again. I told myself as soon as I woke up this morning ~
“It’s BACK to LIFE, BACK to REALITY….” Yup, totally sung like the song
My goals are to get back on track, tracking 100%, guzzling my water and making sure I start my day with DELICOUS Points+ friendly breakfasts.
I was craving a McLovin’ My Sausage Egg McMuffin, but, I made it work with what I had on hand.
* 2 slices Trader Joe’s FF Multi-Grain Bread (3 points+)
* Morning Star Veggie Sausage split in half to cover the bread (2 points+)
* 1 “fried” egg (2 points+)
This totally hit the spot along with my iced coffee. I didn’t have time to eat the melon I packed because my morning meetings started as soon as I walked in the door.
My day FLEW by and so did lunchtime
I quickly snacked on a banana with a Trader Joe’s Lite String Cheese to hold me over since I knew lunch would be late. (1 points+)
I had NO IDEA it wouldn’t actually happen until 3:00 PM. By the time I walked in the door, we both agreed there was NO time to actually make lunch and embraced “Linner at Chipotle”.
* Romaine
* Chicken (5 points+)
* Pico de Gallo
* Corn Salsa (2 points+)
* A small sprinkle of cheese ~ about 1/2 of the usual (2 points+)
* GUACAMOLE!!! (4 points+)
Definitely not how I planned my day, but, I tracked it all and took baby steps to getting back to track!
I have a feeling a bowl of watermelon/cantaloupe is going to be in my future for dessert.

I do often make my own iced coffee. I simply brew my coffee over ice, add a splash of fat free half and half plus a 1/2 tsp drizzle of agave nectar.
Nothing too fancy….but, I have used chocolate and coconut syrups to mix things up.
