Hi all! How was your weekend? Our weekend was pretty low key and filled with sunshine. I almost started our garden but so think that will be next week’s project. The Husband was super happy that got the first time in months, we could go to the Alameda Antique Faire as it was not rained out.
At the fair, we split a bacon, egg, pico de gallo & salsa breakfast burrito (4 sp).Plus a tall nonfat cappuccino with caramel on the foam only (2 sp).On our way back into town, we had lunch at Vasquez Deli. I had 2 crunchy chicken tacos for 10 Smartpoints.I told myself that this week is the week I am going to get back to cooking even if I have to “fake it til I make it”. This is honestly the longest time I’ve struggled with not feeling excited about cooking, menus, etc. I am proud that after a long day, I still came home and cooked a modified version of this Bacon, Asparagus & Gnocchi recipe – it’s a start of a good week!
Instead of pancetta, I used 3 pieces of Trader Joe’s 1 point bacon.
After cooking the bacon, I set it aside. In the same pan, I sauteed a shallot, asparagus and mushrooms (about 5 minutes) while the gnocchi water boiled.Add 2 cloves of minced garlic and cook an additional minute.Top with gnocchi, 1/2 cup pasta water, 1/2 lemon squeezed, sea salt and black pepper. Cook 1 minute longer.Sprinkle with 1 oz fresh parmesan, crumbled bacon and serve.The little gnocchi picked up all that cheesy, bacon goodness while the lemony asparagus and mushrooms brightened the flavor.

Have you tried TJ’s Cauliflower Gnocchi? I don’t like it boiled or sautéed, but it is awesome roasted. It might be good in this ?
