Beer~Beque!

We interrupt my regularly scheduled Daily Eats posts to tell you all about the BEER FEST that went on today!

The AWESOME folks over at New Belgium partnered with the Foodbuzz Tastemakers and asked us to create a Recipe or a Food Pairing using their Beers.  I figured why not give them BOTH recipes using their BEER and recipes to DRINK their beer with ~ Are you all ready for it……

You all may recognize New Belgium for their Fat Tire, but, did you know that they actually make several varieties of beer?

    My fiancé loves all my WW cooking but I think he actually did a Happy Dance when he saw the pics of food using his fave brewery. “Can I have ALL of that?” came out of his mouth… Go Danica!!

    Yes, I am working on typing them up and posting them over the next few days. 1st up the baked beans, then the muffins and I’ll go from there.

    Danica, you never cease to amaze me!!! All of those dishes look so delicious! I can’t wait to try them out.

    In other news, I finally whipped up some of your Meyer Lemon cookies (w/ a couple of my tweaks bc you know I can’t ever truly follow a recipe w/o tweaking it!). I decided to make a double batch since I had some friends over to sample & I wanted to bring some for Easter lunch to my brother’s house today. Well, first of all, I used lemon extract instead of vanilla (can’t have too much lemon, right?) and I also used regular lemons instead of Meyer lemons bc I really wanted more of the tartness rather than sweet lemony flavor. I will say I almost couldn’t walk away from them!!!
    I probably should have tried my hand at making a single batch first, but it worked out alright making a double. Then I got heavy handed in my scoops (dough was a little “sticky/gooey” so I should have chilled it longer, but I was impatient! So, what should have been *80* cookies probably turned into about 60 (so I’m estimating 3pts for 2 large cookies!). The first batch should have cooked a little longer (again, impatient!) but had a nice dough-ey cakey goodness. The 2nd batch cooked a few min longer & got a little more “done” around the edges, almost caramelizing the sugar. Both versions were amazing!
    My friends were raving about them, then the husband came home and he ate several & took a stack of them to the bedside table to nibble on before bed. I, myself, was only “supposed” to eat 2 (maybe 3), but I couldn’t help myself and ended up having *6* of them!!!! I’m not sure these are safe to keep around but they are definitely a winning recipe! Thank you for this goodness!

    These recipes sound great Danica! I made a beer bbq sauce with the 1554 but that was where I stopped. I wish I was as creative in the kitchen! Those corn bread muffins look to die for!
