Happy Monday All!! I am so glad to be back home, but, I am SO TIRED and well, it’s Bachelorette finale night :D So, I decided that one of my FAVORITE breakfast recipes from the archives was in order ~ it’s “fun” and “fruity”!
I LOVE using fresh summer fruits in my breakfast and blueberries this time of year are AMAZING. This is quite possibly the easiest blueberry pancake recipe with Fresh Blueberry Syrup recipe you will ever make ~ especially since you whip all the ingredients up in your Magic Bullet.
Oh and it doesn’t hurt that this entire plate is ONLY 6 POINTS!
Blueberry Protein Pancakes with Fresh Blueberry Syrup
INGREDIENTS:
1/2 c ff cottage cheese
1/2 c uncooked oatmeal (quick cooking or old fashioned)
1 egg
1 egg white
1-2 T ground flax seed
2 T maple flakes (could use agave or sucanat or brown sugar, etc)
Splash of vanilla extract
Dashes of cinnamon & salt
handful of fresh blueberries, 1/2 blended in and 1/2 stirred in
Toppings: Fresh Blueberry Syrup (recipe below), fresh fruit, Greek Yogurt
INSTRUCTIONS:
Blend everything together until smooth and creamy. I use my Magic Bullet and it only takes seconds. Cook on a skillet over medium heat (use ns cooking spray or 1 tsp oil) on both sides until browned (about 5 minutes total).
Serve up with your favorite toppings or pure maple syrup, fruit, almond butter, etc. The options are endless.

I made up 4 pancakes that included a few blueberries blended in to make them BLUE and a few blueberries stirred in for chunky blueberriness throughout.
While I mixed up and cooked my pancakes, I cooked the Fresh Blueberry Syrup.
Fresh Blueberry Syrup
INGREDIENTS:
1 c fresh blueberries
1/2 c water
1 Tbsp PURE Maple Syrup
INSTRUCTIONS:
Combine the blueberries and water in a medium sauce pan over medium high heat. Bring to a boil, reduce heat and simmer until majority of the water is reduced. Remove from heat and stir in the maple syrup.
Makes about 1/2 cup of Fresh Blueberry Syrup, 8 Tbsp, 2 Tbsp per serving

I topped my 2 pancakes with the Fresh Blueberry Syrup, 1/4 Trader Joe’s 2% Greek Yogurt and fresh blueberries/raspberries. OMG ~ absolutely amazing!!!! The best part is that my entire meal was only 6 Weight Watcher Points!
I am exhausted from being up since 4:30 am, but, I am determined to finish the show! Tell me what you all think of Ali’s Choice ~ I totally want Cape Cod Chris all the way, but, I have a feeling she is picking “ricko suave” *sigh*

This sounds like such a delicious recipe!! Bloobs+cottage cheese is one of my all time favorite combos, so I am down for trying it in pancake version;)
