Happy Sunday all! It feels like forever since we last chatted. Last week ended up getting a little crazy busy, but, I am super excited to be back in action. For those wondering on this week’s Wordless Wednesday, that was The Husband’s Mom’s pup. Her Halloween costume is even more hilarious in person because the arm’s swing back and forth like the “rider” is going for a ride as she walks.

I think that catches us up for the most part ~ I have a few more fun pictures to share with you all later this week from The Husband’s surprises for me this past week. I am pretty sure you all will be crackin’ up.
Before heading out to the Alameda Antique Faire this morning, I packed up the usual Simply Filling Snacks……
And whipped up a big Oatmeal Protein Pancake to keep me going all morning long.
Topped with 1 Tbsp Whipped Butter, 1 Tbsp Pure Maple Syrup and a sprinkle of unsweetened coconut. (SF + 3 WPA) – 11 points+
Today was such a beautiful day in the city and the weather was absolutely perfect.
Once the fog layer burned off, you could see the Bay Bridge and City Line from miles away.
5 hours and a million steps later, we were done and off to Yokoso ~ my favorite sushi place ever.
Their crisp sesame salad seemed extra delicious today but I am sure it may have been the fact that I was starving and willing our food to come out fast (SF + 3 WPA for the dressing) – 3 points+
I love Miso Soup but pretty much never eat the tofu or the slimy green seaweed (SF) – 2 points+
Which makes it pretty funny when you think I do not mind the seaweed at all in sushi….that is as long as the rice covers it up. The rolls with the seaweed on the outside kinda freak me out.
You can add that fun fact about me to go along with the only way I can eat fish ~ raw…it’s less fishy that way
TUNA STEAK ~ Spicy Crab Meat Topped with Ahi, Avocado, Green Onions, Tobiko SRIRACHA and special sauce made extra spicy for me = LOVE!!
I estimated this based off a Spicy Tuna Roll at 1 points+ a piece. (SF+ 8 WPA) – 8 points+
We stocked up at Trader Joe’s for the week on our way home, then, we were off to see the movie Taken 2. You know, I can see how everyone is giving it a bad wrap because some of the acting is a little cheesy in the sequel. However, we both still really liked it and wished the wife/daughter would toughen up a little LOL.
I also prepped a new recipe for lunches this week. For the record, I am pretty sure I have not desire to ever peel an Kabocha Squash….like, ever again.
My soup pan started out looking like this…..
Instead of broth, I used Light Coconut Milk and I even got al Iron Chef like by adding the cobs to the broth for “flavor”.
15 minutes later everything was cooked and went from looking like this….
To turning green like this ~ I totally blame the cilantro.
While the soup cooked, I prepped a quick corn salsa with the last of the season’s fresh corn on the cobb.

You do not need to peel a Kabocha. You can eat the skin!

Peeling winter squash was the bane of my existence… I got the peeler below on amazon and never looked back. The way it’s designed, you have much more control over the peeler and its like 43672864 times faster than the traditional kind. I have bought and peeled only one kambocha. For the record ;0)
